    Just popping in to wish you well for tomorrow, I hope it goes really well and you enjoy it.

    Ive been having an awful lot of problems with my tummy this week and its been in the back of my mind about dairy and gluten for me for a very long time (plus DS2 is now coelliac), so I am going to do something about it. Reading the chat on here I will try and get a blood test first, as I think I need other things testing too. But I will begin to reduce my intake and try and find a gluten and diary free chocolate which is nice?? ANy ideas? Otherwise I will try and make the bliss balls with cocoa powder and some goodies!

    Ive been having an awful lot of problems with my tummy this week and its been in the back of my mind about dairy and gluten for me for a very long time (plus DS2 is now coelliac), so I am going to do something about it.     I am hoping the chocolate in Mr T is okay still as that is my go-to. But I didn't go into there yesterday so didn't check. I spent two hours (!!!) in Mr S and Mr Al yesterday as I checked EVERY packet 🤣🤣🤣 I ended up buying some gluten and some gf of things in the end -i.e the falafels. As the gf were expensive! So I bought non GF for DP, kids to eat and I will put big stickers on mine MUMs DO NOT EAT (and hopefully kids don't ignore it 🤣). That way I'm hoping some of my stuff will last two weeks and so the Grocery shopping shouldn't be as expensive as it was this last week. Still feeling the ouch over that!
    My friend is coeliac and I've messaged her asking for her recommendations on a few bits as I know she's dairy free too. Will see what comes back from that!

    Today I'm making:-
    Protein balls (cacao, orange oil, dates and coconut)
    Bean burgers (gf and normal)
    And my mince mix. This way I will have some bits ready to grab or cook as I don't know how busy my week will be yet. I don't even have my timetable to know days/ hours yet. So trying to get prepared as best as I can.

  • Some doctors will still send you for the bone density scan without the official ‘diagnosis’ - I’ve not needed to be tested as my DS was diagnosed by biopsy (15 years ago) and bloods and it runs in families - I was perfectly fine for years then about 6 years ago it started to grumble a bit (but I ignored it !) then nearly 4 years it jumped off the ledge and now I’m super sensitive. We don’t get GF prescriptions here - not many areas do 😩😩😩😩
    Oh that's good to know. I might just keep the Drs appointment I did make (depending on my new job hours actually 🤔) and go speak to them anyway. I'm annoyed that I never can get into my dentist or Drs anymore you literally have to wait so long that you've usually done something about the problem yourself by then.

  • Struggling with motivation today. DP is off and started on his list of jobs. I'm very grateful to him for working hard all week and still doing lots at the weekend. 
    I'm hoping my energy starts to return once I've detoxed from gluten a little.
    On today's plans though I intend on cooking. I want as many meals for the week made and put into the freezer ready to pull out, as I can possibly do. So will start on that in a mo.
    I sewed up my skirt that I bought yesterday on v1nted that had the broken zip. It's not perfect as done by hand but I used tiny stitches so you can't really see it and we'll, it was free in the end so all good. I have four skirts that fit me now. I released a few more to the CS pile along with some of DP old stuff and some old DVDs. It's all in a pile in the hall. Along with FLD stuff 🙁 I am gifting all of that to my sister's new puppy. DD took out his jumpers as she wants to keep them, so it's mainly food items in the box for my sister. I need to release it as seeing it every day is making me sad. 
    So those are jobs for next week now. 
    Bed was due on Tuesday but DP just realised he had a day in trade booked ahhh! So have to put it off until he's back as I'm not sure on my days/ hours yet. I'm hoping I am doing six hours over four days rather than it being spread to five days. But I guess I don't have a choice and will have to see what I'm given.

    Right off to get on with this cooking or I'll never get it done!

  • Okay, I have prepped 8 patties of bean burgers (2 meals), frozen half. Used three tins of beans so have plenty left to make another batch of 8 (didn't have a big enough bowl to do double the amount today). I used a whole tub of salsa instead of the grams it suggested. Also used milled linseed / GF flour half half. But stuck to the rest of the recipe. 

    Made over 20 protein balls they're in the fridge. DS loves these, made with cacao, coconut, orange oil and a box of dates. 

    Cooked chickpeas in bulk (half eaten already from people deciding they love fresh, hot chickpeas and taking portions already!) kids love these as snacks after school and they're healthy so I don't mind them snacking on these. 

    Made 3 portions of 'mince' in tomato sauce, my bolognaise mix. I will freeze all 3 as i have one out the freezer from last month for today. I will make these into a meal when defrosted, bolognaise is ready to reheat, and can adapt for lasagnas/ cottage pie or something else we fancy and depending on what we have in in the way of pasta, potatoes or rice to go with it. Used red and yellow lentils today as they were nearly empty in the jar. One punnet of mushrooms, mushroom stock, 3 peppers, 3 onions, garlic and 4 tins of chopped toms and a tube of tomato paste. 

    Going to find my clothes for tomorrow in a mo and make sure they're ironed. We don't have much wardrobe space each at the mo, and our ironed stuff is getting super creased again once it goes in the wardrobe thanks to getting squashed. At least I have a capsule wardobe now so all similar colours and can just pick and choose whatever is clean, ironed and ready to wear. 

    Making cottage pie this afternoon. Defrosted the mince part and will add gravy, marmite, mustard and veg to it and do some mash for the top. DP has been painting the kitchen around me which I am super grateful for as I cannot find the motivation to finish it for some reason! Took a few pics of the food I've spent all afternoon prepping, will pop them in the next post :smiley:

    What proportions do you use for your balls?  I have a lot of shredded coconut to use up and I'm wondering if these might work?  I  usually use nuts and dates but am out of nuts other than the coconut!
    Made it to mortgage free but what a muddle that became

    In the event the proverbial hits the fan then co-habitees are better stashing their cash than being mortgage free !!
  • I basically use a whole box (800g jordan river ones from Mr T) probably 2/3 large dessert spoons of cacao, 4/5 of coconut and 6/7 drops of orange oil and blend. Then use coconut in a bowl and use as a dusting on the outside of each portioned ball. I never measure anything unless it's a new recipe (am a bit of a nightmare for this ) so basically keep mixing bits in until I have right consistency/texture. I rarely use nuts in mine anymore as DS usually eats them before I get round to using them. I use seeds sometimes too (mixed ones) they work well too.
