    Actually, that is a good point about freezing - the Stam. St. bag is….. 500g? But freezing would counteract (hopefully) any going mouldy. As reviews have been left about the cheese being mouldy on opening, I guess that is harder to avoid. It gives me a slight comfort that it happens with MrS as well as hB - although to be honest, they're likely from the same factory…….

    rt - I totally get the argument for grated, and whilst I don't normally buy pre-grated, I'm certainly not against it. And for this use, the pre-grated is the way to go…. as long as you're not paying a (slight) premium, only to have a mouldy product that you end up tossing. I don't mind paying a premium (occasionally) for things that aid getting food on the table/creating a specific dish, but now I know bagged, pre-grated mozzarella (in particular) is subject to going mouldy quickly, I'm a bit more wary.

    But yes, I think I need to go one of two ways - buy a small bag and use it within a day or two (fingers crossed no mould already present), or buy the cheaper, but bigger bag - use what i need and put the rest into the freezer, sealed.

    I’ve always found the grated mozzarella goes mouldy very quickly unless you decant it - the bags always seem moist. Not had an issue with mould on opening but a small air hole is easy to miss on any of those type of bags.

    I’ve not seen any of the Paul and Bob programmes (Paul whitehouse and Bob Mortimer) but do enjoy Vics (Jim Moirs) art work, such an incredibly talented bloke.
