I thought it was vinyl, not latex.I can only guess that it's viscous, the layer is thin enough and the screed is porous/absorbent.
But it still looks flat to me (no slope to the drain)

You need a level (tool) instead of relying on your eyes. Or a small heavy ball. Or just spill a small amount of water.0

I have checked with a long spirit level and the floor is flat up until 18 inches from the drain in all directions
