Bread sauce

I'm doing xmas dinner this year as well as 4 hours driving fetching and carrying the relatives.

I'm trying to keep everything as simple as possible. I was going to buy a bread sauce mix but Asda had sold out.

So, I need to make it from scratch and have onions, bread and milk, butter, cream and salt and pepper. All the online recipes seem to suggest nutmeg, mace and cloves in various quantities. Will it be ok without them? I really don't want to venture out to the shops tomorrow just for those. :eek:

    I never add nutmeg or mace or cloves to mine and I haven't had any complaints yet ;)

    Phew. Thanks for that. I was coming out in a cold sweat thinking about having to brave Tesco's tomorrow. lol

    So Jayar, how do you make your bread sauce?

    I just infuse the onion in the heated milk for a couple of hours, then take out the onion, reheat the milk and add breadcrumbs until the sauce is the right consistency. Add the butter and cream and a bit of salt and pepper, get it back up to the right temperature and serve.

    Dont worry it will be fine without just not have that spice flavour.

    Its soooo much nicer than packet, everyone said they hated bread sauce till they tried the real stuff home made food of the gods, love it!;)

    I seem to have 2 packets of bread sauce that need using up. Does anyone have ideas for using them other than just making the sauce which I am not keen on?

    I am sorry if this has already been posted I have looked and cant find it anywhere, I am looking for a bread sauce recipe, it sounds silly but I have never made bread sauce and I am sure it cant be hard, but I am not sure where to start - help please :o

    I used this recipe one year - to honest since then I couldn't be bothered faffing around and have gone back to packet mixes!!

    I do a very simple recipe - I think it was from Jamie but I've adapted it a bit as I don't like cloves.

    So you put 500ml milk in a saucepan with a chopped onion and a couple of bay leaves (this is where you'd chuck in the cloves if you like them). Let it simmer very gently for about 20 minutes, then stir in 6 slices of bread (crusts cut off and the bread chopped into inch square pieces) and then just stir occasionally. It really doesn't take long once you've stirred in the bread, but it really depends what sort of consistency you're after. I prefer mine not too runny so I let the bread really soak up the milk. If you prefer it looser, you can just add a splash more milk. Either way it should look like a loose porridge consistency.

    The current BBC Good Food magazine has a simple "all in one" recipe in it. Looks much quicker/easier than the normal infused milk version which kept me using the packet mixes.

    Thanks very much everyone I shall give them a go and see which one I like best, I knew it would be straight forward - Doh! I can be so dumb sometimes lol
