Are businesses etc operating as normal?
I just would hate to get there and the island not be in a state for accommodating guests. 

I can only speak for Skiathos Town but most businesses seemed to be operating as normal today - shops, bars and restaurants.
Passed a bus headed to Koukenaries on our way to the airport.
Sorry - no idea what hotels are like further out of town or what state beaches are in.

I think it would be a good idea if you asked this question on the Skiathos board of TripAdvisor.
I know people have been posting on there about damage. Somebody may be able to tell you about your hotel.

We are home, flight on time, TUI provided free toasties, snack and soft drink.
Both JET2 flights (not sure of destination) were slightly delayed.
