In terms of reasonableness, what are the three relevant costs, i.e. mileage, parking, and the equivalent public transport?  You mentioned being ~£250 out of pocket, but that wouldn't seem a reasonable cost just for parking, so did that include the mileage that they've agreed to cover?
Roughly £250, yes. The parking, as it was booked with less than 24hrs notice was almost ‘on the door’ price of over £100 for 3 days and with mileage at 45ppm, that takes it to not far away from £250.
As above, the purpose of the question was to try to ascertain what might be considered reasonable, and hence asking about the costs of equivalent public transport versus driving and parking, but you didn't clarify that?

If the airline has offered to reimburse your mileage, is it at the rate you're hoping for, or have they proposed something else?
    Apologies, I misread that.

Public Transport - that isn’t an option for us from where we live (middle of nowhere), with a baby and a fair amount of luggage. With ~18hrs notice from cancelled to rescheduled flight, I doubt we could’ve organised anything other than a private taxi which probably would’ve cost £400-£500 each way.

Mileage - that’s always been the going rate from HMRC so we used that. They offered to pay it but initially only sent bacs for one leg not a return trip.

So they (eventually) paid about £150 for mileage but not about £100 for parking, and there wasn't any cost-effective public transport alternative?  I can see why you'd be aggrieved about being £100 out of pocket but strictly speaking the airline isn't legally liable for that shortfall, so IMHO it's far from a certainty that a court would award you that, but your prerogative to try!

Looking at another angle, do you know the reason for the flight cancellation, i.e. are you eligible for fixed tariff compensation?

No, £47 x2 for the mileage.
    £105 “missing” for the parking.

We weren’t told the reason for the cancellation and when we enquired, they wouldn’t tell us why.

Perhaps reading between non-existent lines here, but if the cause of the cancellation was extraordinary circumstances beyond their control then why wouldn't they just say that upfront to deter claims?  Nothing to lose by submitting a compensation claim and pushing hard for a detailed explanation, escalating to the CAA if you have reason to believe that they're not being straight with you....
