Just thought I would post what we decided to do in case anyone else is looking in the future.
Ended up getting 2 three pay as you go sims. Activated both and out a £15 bundle on it which gives 50gb of data (she can use 12 gb per month in USA). Going to top that up once and as I can’t do it a third time die to threes limit she is going to switch to the second sim i sent out with her and we will top that up with a bundle which should see her through.
In case it helps Three is connects to T Mobile in USA and she currently has a brilliant signal where her camp is.
Thanks to everyone who replied. All information was really useful.

Thanks for providing the update. Always helpful when someone asks a question and then explains the outcome once a decision has been made  :)

For added info: If you are in USA (or I will assume any country) for longer than 2 months, contact 3 via chat say 7 weeks into your trip. Let them know you need to stay in USA (or wherever) longer than you had expected.

3 are able to “extend “ the roaming ability beyond the 2 months stated in their T+C as a courtesy.

I needed to do this last year, and it worked just fine.

Also - able to top up from USA and use the credit to purchase Data.

Having used a Three UK SIM exclusively outside the UK for about four years now, I doubt there's any need to worry about their roaming period 'limit'. Likewise EE and O2 Sims, so perhaps it's technically impossible to enforce such limits. Has anyone had roaming curtailed because of extended use..?
