I am not sure why para 4 appears to be repeated at the start?
And paras 15 and 21 are in completely the wrong place, ruining the flow of the defence & ending up hidden. They should be in the facts near the start, as para 4 and 5. Then you simply renumber the rest below.PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).

I would clarify in para 4 that loading/unloading includes goods and people.
If your cab has a disabled sticker then mention that as well.

Do you guys think that I should include copies of my/cab’s Hackney Carriage TFL’s licenses, or at least mention having them and possibly using them at the next stage?

You don't send anything with your defence, but no harm IMHO, mentioning you are a cab driver, as loading and unloading goods and passengers is what you do.2

As above, save evidence/details for the witness statement/exhibits, but do mention the points briefly in your defence. If it is not in your defence then you can't add them later, so include everything you intend to rely on later.
