Maybe they need prodding and reminding that they are jointly and severally liable for the actions of their agents, and they are involved by the virtue of allowing such a third party ( and un regulated parking company) to act on their behalf on the land in question

You can get on with your life and wait to see if Parking Eye eventually drop their claim or in the meantime you could make a nuisance of yourself with social media, local press, MP etc.
As previously pointed out Parking Eye tend to farm out their dodgiest PCNs to third parties to chase up. Ignore them unless you get a letter of claim.5
