How many doors are you planning?
Its just that I think that with space two doors wouldn’t look right and if you use kitchen hinges they will struggleMaybe, just once, someone will call me 'Sir' without adding, 'You're making a scene.'1 -
Struggle as in, they’ll sag on the closing side?
We could do three doors, I suppose. Each door could be ~50cm wide, with any excess being the left filler, right filler, and the partition between the single door and double set of doors.1 -

First step - decide on unit height. Does 'guess' this, as drawing a "what about here?" line on the wall will almost certainly be wrong once the unit is built. Instead, get heights from similar units, and decide what will visually work best in there.1

I think we’re looking to have it around ~60cm height, as then when a 50” TV or whatever is placed on it, we’re looking at the centre of it0

Again, from a visual perspective, I wouldn't have the unit fronts exactly flush with the breast, but stepped out (or even in?) a tiny amount.
OR, plane a nice bevelled edge where the unit will meet the breast so the unit is defined - you don't want the unit face to meld into the chimney breast face.
My opinion. This is your unit.1 -
This may sound a little strange but it’s how my mind works, if I can’t decide on a design I’ll draw it out full scale on the wall then tweak it until I’m happy.
This way I can visualise the finish!

With only 2 doors, each will be pretty wide, so a scaled sketch is a good idea.I was, in any case, going to suggest that the visible side panels, either side of the doors - should be significantly wider than that shown in your pic, perhaps something like 125mm wide.You can play with these visual proportions using sketches, and if the doors look 'too wide', then a simple solution could be to add another faux-stile down t'middle to add more interest?Just measured mine - the unit top is just over 800mm high. No idea why I chose that, but it seems to suit.0

Another trick - put that pic of the unit you are copying into 'Paint', and streeeeetch it!
