1. Just assume the claimant will pay, they usually do and if they don't the court normally gives them plenty of leeway (more than a defendant in my opinion)!
2. You should be able to send your documents by e-mail; some courts have a limit for printing (50 pages for example), you should be able to ask Auntie Google for contact details for courts and tribunals, I think it is called court finder.
3. You should take a copy of your defence, WS (and skeleton argument if you did one), also a crib sheet for your own use signposting your way to each point you want to make to the judge (if they don't cover it themselves) with a reference to the page and paragraph number. You should also take a SPARE copy of the WS in case the claimant tries the old "we didn't receive the defendant's WS judge!"2 -

Skeleton argument only suggested if it is a very complicated case, which is why I wrote if you did one.2
