    I'll be stuffing them with a mixture of dark speckled lentils, courgette flesh, onions, quinoa and millet, peppers etc then topping with a roasted tomato sauce...

    - When bought house £315,995 mortgage debt and end date at start = October 2039 - now £233,521
    - OPs to mortgage = £11,338 Interest saved £5225 to date
    Fixed rate 3.85% ends January 2030

  • Weekend with the grandbaby so not much cooking happened! 

    Today I've cooked the black speckled lentils with lemon and capers and the cannellini bean & harissa 'hommous' that I put on page 3 and I've made a wholegrain mustard veg dish to go with it (chopped onion, sliced carrot and parsnips, sliced broccoli stalks and green beans cooked in stock then a large spoonful of wholegrain mustard added). I'll serve them with salad leaves and pomegranate today then I'll do the leftovers tomorrow with a red grapefruit, black grape, orange and pomegranate salsa. 

    I need to write a menu plan tomorrow- I'm out to eat on Friday and Saturday this week but I have no further things on for a couple of weeks after that so want to really get sorted!

    I know you posted this a while ago, but the mustard veg dish intrigued me! Do you cook it on the stove or bake it in the oven? Also how much stock do you use?

    Hi @kezhead 😁 I actually cook it on the hob in a frying pan. I don't measure the stock but generally use enough stock to cover around a third of the veg, cover the pan either with foil or a lid if you have one, cook till the veg is tender,  take off the cover/foil and continue the cooking process until the stock is pretty much gone then add the mustard, stir and allow enough time for the flavours to combine 😉  hth!! 😁

    Made two loads of tofu yesterday- I'm going to use one for scramble in the morning and the other is currently marinating in soy, mirin, rice wine vinegar, ginger, garlic, Chinese five spice and spring onions. I'm cooking it tonight with either wholewheat noodles or short grain brown rice (dh will decide when he gets home) and serving it with beans, broccoli and cavolo nero

  • Ended up with noodles but no broccoli as we couldn't find it in the freezer 🤦‍♀️ it was lovely though 🙂
