Made a large batch of tofu on Sunday - one block is in the fridge and 3 in the freezer 😁 I made three different okara bases and left on plain - there's a tomato and herb one, a smoky one and a berebere spice one. I will make it into meatballs, loaves and burgers today then freeze them.
We finished the leftovers last night so I'll be cooking something for today but I'm not sure what 🤔 I've got plenty of veg to use up so I may keep it simple and do black speckled lentils with steamed veg and a cashew cream and tarragon sauceDNF: £708.92/£1000

Decided to have some okara burgers yesterday instead of freezing them all. Had them with sweet potatoes, butternut squash from the garden and some rocket.
Tonight we're having mixed grains, broccoli and carrots with butter beans in a parsley and thyme cashew cream sauce. I'll put a piccie on later!DNF: £708.92/£1000

re your butternut squash.....have you seen/tried honeynut squash? It's a close relative but a bit darker and richer. I had one recently - it was a lovely tiddler about 4 - 5 inches long so just a nice portion. The woman that was selling them (farmer's market, not in the UK) said that they are very popular in Europe by which I think she meant across the channel as I've never seen them here. She also said, in her opinion, they didn't need anything extra added, so no butter that many of us might put on a bit of roasted butternut. And she was right - it wasn't needed. Roasted harissa cauliflower, sweet potatoes and tofu in a chilli, mirin and tamari sauce for dinner last night - there's enough left to make a salad with at lunchtime so that's useful 😉
Not sure about this evening 🤔 I have some romanesca cauliflower to use up so will definitely be streaming that - I may make some okara burgers to go with it and some mixed grains...DNF: £708.92/£1000

Had a salad of rocket, black grapes, balsamic and orange and chocolate mint tofu along with romanesca cauliflower and the remaining cashew and herb cream...absolutely lush!! 😍

Back in the UK now and very much looking forward to eating properly again!! 🙌 Vegan options were limited in most places and several of the vegan restaurants were very UPF reliant so I'm feeling very sluggish and in need of fresh, clean and green stuff!! 😳😂
I'm cooking mixed grains and some cannellini beans today - I have no idea yet what I'm going to be making as a dish but it will definitely have those in it 😋 I've got cavolo nero and cabbage ready in the garden and plenty of herbs, I'll go shopping today and pick up some rocket and fruit. Had a large lunch!! 😍 Rocket and black grape salad with balsamic, mixed grains with lemon, cannellini beans, roasted peppers and a cannellini bean and almond butter puree - it was absolutely lush!!
