  • Made a lentil, veg and potato dish from the UFO yesterday (it turned out to be a courgette and tomato sauce) and dh took leftovers for lunch today. 

    Tonight I had a salad with rocket, red grapes, pomegranate, blueberries, balsamic, mixed grains (rye, barley and oats) and lemon chickpeas - very tasty and enough for tomorrow too 😁

    I'm sure you might have posted something previously but wondering what you would advise for dealing with a mountain of tinned chickpeas.  Other than simply dumping them into some casserole.

    Local foodbank group has been gifted crates of these and lots of people simply look at them with confusion in their eyes.  I'd love to be able to put together a A5 handout of simple tips.  I've heard of using the water from the tins for meringues but am thinking more about cooking ideas.

    Both are simple and relatively inexpensive, using store cupboard items, I also used frozen spinach and rogan josh spice mix from an Asian store rather than pricey Patak's paste

    Served these up for dinner with non vegans and they asked for seconds and the recipe :)
    No buying unnecessary toiletries 2014. Epiphany on 4/4/14 - went into shop to buy 2 items, walked out with 17!

    I have cooked a high protein, low carb ‘concoction’ as a batch for work lunches (recording here for reference):
    ~~ 250g mushrooms chopped fairly finely
    ~~ 2 chopped, mid sized red onions
    ~~ good dollop of garlic
    ~~ 2 tins chopped tomatoes 
    ~~ two small bay leaves 
    ~~ pack of ‘sunflower hack’
    ~~ 1 cup of water 
    ~~ good squeeze of tomato puree
    ~~ cook down for an hour and then added the cashew cream that has been lurking in my freezer for months from the aborted management team building cooking thing that never happened … 🙄
    Tastes okay actually 😊👍 It will be interesting to see how it reheats 😊

  • Last night was mixed veg (cauliflower, green beans, carrots, spinach and butternut squash) in a wholegrain mustard and maple sauce, orange and ginger brussel sprouts, walnut and mushroom mince and a salad of rocket, blueberries, pomegranate, raspberries and balsamic 😁

  • Been poorly for a week but hopeful that the worst is over now 🤞🤦‍♀️ 

    Lunch today was rocket, black grapes, strawberries, blueberries, raspberries, pomegranate, mixed grains and hommous - nice and light! 

    I've taken tofu out of the freezer for tomorrow so will marinate that tomorrow - not sure in what yet though, brain is still too mushy to plan that far ahead!! 🙄😂

  • Not been eating much due to feeling poop - thought the worst was over but it's reluctant to disappear apparently 🙄🤦‍♀️ 

    Made noodles with veggie miso broth and tofu crumbles which lasted a couple of days and then a large amount of casserole with rosemary which has been finished off today. 

    Hoping to be a bit more with it in the next day or so so will get back to cooking again 🤞

    So, today is the first day in two weeks that I'm starting to feel reasonably normal - still very tired and have the cough and general cold symptoms but no longer feel that I've been hit by a bus! 🙌 

    I made roasted cauliflower, new potatoes, broccoli and roasted parsnips for dinner last night - there's enough for today too so no cooking required 😁 

    Tomorrow dh is going out for food with some friends so I'll only have to sort something for myself so I'm thinking that I'll have a big salad with grains and orange chickpeas

    you've mentioned 'lemon chickpeas' and 'orange chickpeas'  - how are you cooking these, please?

    And thank you for your inspirational posts - they've been making me much more adventurous re: tastes, textures etc on the same plate.
