    Inspired by lots of the things here I made soup on Friday evening - lightly browned an onion, added some chopped mushroom stalks (I'd normally chuck them as I wouldn't usually include them in anything), added half a tin of chopped tomatoes, couple of pints of stock and about a 2/3 a cup of green lentils.  Bit of soy and herbs for a bit more flavour and then towards the end added some very very thinly sliced quarter slices of yellow and green courgettes and spring onions.  Let the vegan side down by using meat stock cubes as the veggie ones had melted/moulded in a most alarming way.  Proof they'd been in the cupboard too long.

    OH did the usual "what's in this? why are you making this when it's easier to open a tin?" Then he shut up and went back for seconds.  There was a fraction of a portion left so I've bunged that in the freezer with the other half of the chopped tomatoes for the next time we have soup night.

  • Had a stir fry and fried rice tonight- stir fry was made from a variety of veg from the garden so very tasty and enough left for tomorrow lunchtime too. 

    Lots of tomatoes needing to be picked tomorrow, along with sweetcorn so I'll be having roasted tomatoes, corn on the cob, broad beans, watermelon, black grape and chocolate mint salad and leaves.

    I am staring to get tomatoes too, so we are having our ‘French’ salad for lunch today - slice the tomatoes, sprinkle over finely chopped shallot, salt, black pepper, olive oil and red wine vinegar. Mr KK is not much of a salad person but because he was served this in France on our honeymoon he deems it acceptable 😉

  • Ended up doing the picking today so dinner was a large bowl of rocket dressed with balsamic; millet and quinoa; a watermelon, strawberry, black grape and raspberry salad with chocolate mint; roasted tomatoes with garlic and purple basil; steamed beetroot; sweetcorn (from a cob) and some hommous.

    Can I ask what you used to bind the burgers together. My improv attempt were very loose and wet.

    The oats usually do the job but if you want to play it really safe make some flax 'egg' - grind a tbsp (or two, depending on the quantity you're making) of flaxseed and add some water to it (I never measure but I estimate a 1:2 ratio) stir well then leave for 5 minutes before adding to the mixture and stirring through.

    I'll be stuffing them with a mixture of dark speckled lentils, courgette flesh, onions, quinoa and millet, peppers etc then topping with a roasted tomato sauce...
