    I'm assuming this is with a slightly larger courgette or a small marrow.  topped and tailed and then sliced lengthwise.  Using a spoon to scoop out the slightly softer seedier bit in the middle.  

    But I too wait to hear more... maybe with pictures of the finished product??

  • @KajiKita - it's hard to describe (dh can't think of how to either!! 😂) it's a bit like a hollowed out jacket potato that was done in the microwave - tender but firm 🤔😂 

    @Brie - yep, a reasonably large courgette (although not one of my mutant ones that had it's own gravity!! 😳😂)

    The process: top, tail, slice lengthways- use a spoon to remove the flesh until the shell has between 0.5 -1cm of flesh thickness remaining. I just dig it out from the sides - I normally go along either side then channel down the middle but it doesn't really matter as the removed flesh is chopped. 

    Can't give you photos this time as they have already been noshed but I will post piccies next time I make them! 😉 

    They were lush by the way! 🤤 very versatile too - I've previously filled them with bolognese; 'shepherd's pie' filling topped with mash; various rice fillings; 'sausage' and beans; sun dried tomatoes, olives and porcini mushrooms etc...it's a good way to get some extra veg in without really needing to make much effort!!

    We often do the same with large courgettes or small marrows (and big ones too although we end up eating it for days then) and stuff with various things. Savoury rice works well but your recipe sounds very good @leftatthetrafficlights

  • It's definitely a winner @MissRikkiC!! I had quite a bit of the filling left over so we had that for dinner yesterday 😋  

    Tonight, we are having a chickpea 'frittata' - onion, carrot, garlic, fennel seeds, thyme, grated courgette, black tuscan kale and red pepper all cooked down until soft. Chickpea flour, water (or stock) and tarragon mixed together, mix in the softened veg then bake in the oven until firm and cooked through. I'll serve it with a rocket and black grape salad.

    I'll drizzle a balsamic on it - I make a variety of flavoured balsamics (I currently have blackberry, a blood orange, a blueberry, a raspberry and a chocolate mint one on the go!) so it will probably be one of those but a good quality plain balsamic or balsamic glaze would do just as well 😉 (or whatever dressing you like on salad!!)

    Nice one!!  I'd never considered rocket and something sweet like grapes before.  Not sure why as my mom used to make a wonderful spinach, pine nut and mandarin orange salad that I always loved.

    Stuffed mushrooms for us tonight. Trawling internet recipes for inspiration for tomorrow’s meals. 
  • I can generally only eat mushrooms in something @tooldle - I  make a stuffed portabello in filo pastry occasionally but I really struggle with the texture of mushrooms as a general rule!! 🤦‍♀️ 

    Tonight we've had a pan fried veggie 'chuck in' - tomatoes, scarlett runner beans, peppers, courgettes etc cooked together with a variety of herbs served along with grains, sweetcorn from the garden and a courgette, lemon oil and tarragon salad (piccie of the veggie thing below) Tasted lovely 😍 will be raiding the garden tomorrow to see what I'll be cooking for dinner tomorrow night 😁

    We went with cauliflower and potato curry, with brown rice. I stirred a little lime chutney into mine. Loads of leftovers.
