I made shortbread last week. My usual recipe needs a lot of kneading, but I found one on here that was much better. Hang on while I find it. Here 'tis.

saw this for empire biscuits
120z marg
12oz plain flour
4oz icing sugar
4oz cornflour
rub all ings together and knead, roll out 1/4inch thick and cut into rounds, place on a lightly greased tray
gas4, 180oc 20-25 mins, take out when edges are golden brown
sandwich with jam, a little icing on top and dec with a jelly tot sweet
you could just use them to cut out the alphabet too0 -
In the end I made these ones but with vanilla instead of lemon.

This is my recipe for digestives which seem very forgiving when cut out small
6oz flour
11/2 oz oatmeal [I use porridge oats instead and they're fine]
1sp baking powder
1/2 tsp salt [I omit this aswell]
3oz butter or marg
3oz brown sugar
3 tbsp milk
Mix all dry ingredients except sugar.Rub in butter. Stir in sugar and add milk. [I do the whole lot in the mixer as am bone idle]. Roll out and cut into rounds. Put on a greased tray and bakc 180C 15mins approx.

Aril is that plain or self raising flour, i have been looking for a biscuit i can have spread with cottage cheese or dairylea or are these too sweet0

A really good shortbread will have semolina in it......and generally needs cooking on a low heat for about 40 mins.0

Sorry Twink. Have just reread your thread and realised that I only half answered it! [rushing as was due back to work]. The original recipe only had 2oz sugar which I didn't quite find sweet enough but I think with less sugar they'd be fine with cheese.
