Our holiday was cancelled by the holiday but booked as a package ..we have received our full refund minus the admin fees .. they have sent a email saying as a good will gesture they will pay £120 admin fee back to us and £100 voucher to be used on jet2  .. do you think this is acceptable

IMO, what has been offered is broadly inline with the norm following a change of resort and holiday cancellation. 

If you go back and look over the holiday T&C’s you should find out in these what compensation they pay against the holiday changes you experienced.  These are normally split by the time when you were notified before departure and if a ‘significant’ or ‘minor’ change.  In your case, from other posts made, the highest in light of the closeness to departure date, plus a change of resort (rather than change of hotel if that alternative was the same or a higher category).

If you have no intention of using Jet2 again you (but don’t tell them this when you write back) then you could ask Jet2 Holidays if they would give you the £100 in cash instead of a credit voucher.  They may however refuse this or even offer a lower amount for cash.
