Fresh cherries - how to use?

    hi,a friend has just brought me a load of cherries from there garden,i have never cooked with fresh cherries,any recipe ideas anyone?

    Clafoutis -French classic of cherries in batter.

    Personally I'd just eat them;)

    Gosh, a bucketful, you lucky lucky thing. They cost an absolute fortune.

    You could try making a fruit spirit with them. I do this with damsons (just search for damson or sloe gin on this board) very easy-fruit, sugar and alcohol, brandy would be best with cherries. You leave it for about 3 months then strain the spirit and bottle. Lovely.

    Or, I splashed out on a jar of Bonne Maman Cherry compote this week -basically cherries stewed with sugar. It will keep in the fridge for a week or freeze well. Good with yogurt;)

    I'll second that - you're now third in my list of people to be jealous of (after those with gluts of lemons and Seville oranges - both in Spain ;) ). We have an existing thread on fresh cherries, so I'll add this one - more ideas for you to browse :D

    The good thing about clafoutis is that you can use the cherries frozen in it just the same. I always freeze my cherry glut after taking the stones out (sadly none at all this year because of late frost!), and we have clafoutis all year round.

    The other dessert i make a lot with the ones I have frozen is called 'Danish cherries': you put them in a pan to soften with only a drop of water and cook till just soft. Bind the mixture with a little cornstarch and add some grated lemon zest, a little lemon juice and sugar to taste. Serve warm, at room temperature or cold in pretty wine glasses - a dollop of Greek yoghurt finishes it off (or whipped cream, or mascarpone...)

    morning!
    last night i bought four packs of fresh cherries reduced down to 10p each in tesco. My children love them but not enought to eat four packs before they go off without getting the runs ! - so what can i do with them, do they freeze well? and if so do i ned to do anything with them befire freezing them?

    You can freeze the as they are. They'll be fine once they're defrosted, but will have lost some of their firmness ;)

    I'll add this to the existing cherries thread to keep ideas together.

  • Wow I am soo excited went blackberried picking round the firleds at my house this tee time then on way back saw a tree brimming and i mean brimming with cherries lovely big juicy ones.....thing is what shall I do with them now we are going away on saturday and there is only a certain amount of cherries we can eat bythen.

    I am so frustrated too cos I couldn't reach the rest I picked 2 big big washing up round bowls full and that has just dented the amount that is there......

    Tips please on what I can do with quickly

    Is cherry brandy easy?

    can i freeze some to use when I come back off hlidays?

    OOO I am sooo excited I feel like a kid again!!!
