Fresh cherries - how to use?

    Try this. It's dead easy to make and tastes fantastic.

    Cherry Cake


    Preheat oven to 180c/160c (fan oven) gas mark 3
    Prepare a 9 inch square tin (ideally with removable bottom)

    Ingredients (cake)

    500g approx cherries (stoned)
    125g buter
    125g icing sugar
    1 pinch salt
    Rind of 1 lemon grated
    3 eggs
    150g plain flour
    50g cornflour
    ½ tsp baking powder
    2 tbsp natural yogurt or sour cream
    Generous handful of flaked almonds

    Icing

    75g icing sugar
    2 tbsp approx Kirsch or lemon juice or water


    1 Cream butter and sugar. Beat in eggs gradually
    2 Stir in lemon rind
    3 Sift remaining dry ingredients into the bowl and fold into mixture
    4 Fold in yogurt
    5 Pour mixture into baking tin
    6 Scatter cherries over the mixture (they will sink a little when baking)
    7 Scatter a generous handful of almonds
    8 Put baking tin into oven for 30 mins approx
    9 Leave to cool for 30 mins. Drizzle icing over cake while it is still warm

    Cake is best eaten within 24 hours.

    got some yummy cherries in the market last week, 99p for a big punnet...made pork fillet with cherry sauce (was in one of the food mags!), it was cherries, bit of red wine, some cherry jam (Lidl's one is good!), water & cranberry juice (also Lidl). Simmered the remaining cherries in a slurp of whiskey (brandy, vodka etc would also be good) & a dollop of honey & a dollop of the jam then used them to make a filling for choc sponge cake with cream...super tasty!!:p

    well with you posting the thread about cherries... i just had to go out and buy some and at the moment i have one in my gob.....and very tasty it is to.if i dont eat them all tonnight... i am going to make a cherry sauce that was mentioned earlier... and when it is still warm....put it in a pancake with some lovely vanilla ice cream...( black- sats recipe) ... I used to have something similar to this years ago in the little chef.....

    i will be doing loads of cooking tomorrow......with all the scrummy recipes on moneysaving old style...

    I make a chocolate black forest pudding using the jars of cherries you get from Lidls, but it should work with fresh cherries.

    It's basically Eve's Pudding from the Be-Ro book with a chocolate sponge and cherries instead of apples. I don't use sugar but you might want to.

    The bero site is down at the moment but google still has a cache of the recipe here.

    I've got 1/2 lb of cherries I've just stewed, and I fancy freezing them with some natural yoghurt. Should I blend it all to a mush first, or mix it with a spoon and freeze?

    We have the most delicious cherry tree in our garden, so I was able to freeze 12 pounds of them. I ate enough (and the birds ate loads too) when they were on the tree, but I didn't want to leave all the rest for the birds, so froze them. Trouble is, I'm the only one who likes them and I don't know what to do with frozen ones. Any delish ideas? (Please remember I'm a strict vegan too).

    I'm big into my Salsas. Love the combination of hot and cold like a spicey rice pilaf topped with salsa or stuffed aubergine served with salsa.
