Easyjet delayed due to ill pilot

Flight from Copenhagen currently 8hrs delayed. Got on the plane, only to be told the pilot has got ill and needs medical attention
After lots of phone calls to Easyjet HQ was told a new pilot would be flown out, but he wont get here until until 5.30pm local time.
Having never claimed before, would this be considered a valid claim?

Staff illness isn't regarded as extraordinary circumstances, so if that's the sole reason for the delay, then you will be entitled to compensation....0

Guessing this was flight U21986 on 1st August. Scheduled CPH 10:35 - MAN 11:35. Actual time of departure 17:52, arriving MAN 18:33, 6h 58mins late.
The aircraft landed in CPH on time, so as the OP says the crew member took ill in Copenhagen. Whilst the regulations and judges decree that crewing issues are within the airline's control, I don't think it's too bad getting a replacement crew member to Copenhagen and then operating the flight within that time frame. Copenhagen isn't a crew base for easyJet so they had no options other than to get someone in. A delay like that is a huge inconvenience and not particularly enjoyable but I doubt there's much more they could have done.
All that said, to answer the OP's original question, yes compensation is likely due and the forms are available on the easyJet website.3 -

Out of interest im guessing this flight ran at a massive loss for Easyjet? Food vouchers, compensation, airport fines for being late and extra crew costs must add up.
Do they have insurance for stuff like this?0
