Hi @LemonadeBudget - Here's the (Be-Ro) recipe I use for ginger cake, it's quick and really easy. Sometimes hard on the outside when fresh but becomes softer and slightly sticky if kept for 2 days or more before cutting - if you can bear to wait that long.
It freezes well too.
8 oz SR flour
1/2 tsp salt
2 tsp ground ginger - I tend to use a lot more as we like ginger!
3-4 oz raisins (optional) - instead, or as well as, you could use 2 oz crystallised ginger, chopped small, for more ginger loveliness
2 oz soft margarine
2 oz soft light brown sugar - I used soft dark brown as that's what I have, it just makes the cake a darker colour
4 oz treacle or Golden Syrup
1 egg, beaten with enough milk to make up 1/4 pt
1. Mix flour, salt, ginger and raisins in a large bowl.
2, Melt margarine, sugar and treacle in a pan, add to flour with beaten egg and milk. Mix well till all dry ingredients are absorbed into the liquid, but do not beat.
3. Pour into a greased/lined tin (about 7" square)
4. Bake in a moderate oven (325-350F, 160-180C or gas mark 3-4) for 1 hour. My oven runs "hot" so I use the lower temperature for a shorter period, about 40 mins. Test with a skewer, if it comes out clean then it's done.
5. Cut into fingers or squares when cool.

I think I may be missing something with overnight oats but I can't see the appeal - give me proper porridge any day.
I don't like the texture or the taste - although I wasn't putting fruit in because I do have some dislikes with mixing hard and soft textures in food.
Fruit scones for example. I like plain scones. I like raisins. The two together are the devil's work. Odd, isn't it?All shall be well, and all shall be well, and all manner of things shall be well.

I don't think it's odd, Elsien, it's just your preference. I like butter and I like jam but on bread or scones etc. I don't like them together. When out I have been known to slice a scone in half and put butter on one half then jam on the other half and eat them separately. I don't put cream on scones either.

Generally I don't like mixing sweet and savoury things together although I have a few (rare) exceptions - it's just me!10 -
I'm the same @elsien I can't stand overnight Oats (despite loving porridge). And I really wanted to like them as having them all prepped and ready to go in the morning sounded great. But alas, the texture and taste was just horrid to me.
I am in love with yoghurt and Granola though, and that's quick to dish up in the morning 😀February wins: Theatre tickets11 -

My grandchildren think I'm extremely odd because I make my porridge with water and a dash of salt, then pour it into a bowl and add milk around the edges and a small sprinkle of salt on top. But its how my late Scots Mum always made it and the thought of putting sugar, syrup or even fruit in it scunners me (old Scots word for making me feel ugh)
My sis-in-law not only like syrup but also double cream with her porridge I've tried the instant stuff and ready break but to me its just as though I was eating wallpaper paste. To me toast has marmalade on usually Robertsons silver shred or Roses lemon and lime, but my grandchildren put jam on toast Yuk !!
Glad I'm not the only one with a different taste in porridge. I too can't enjoy sweet and savoury stuff on the same plate, only exception would be some nice black grapes and roquefort cheese ( secret pash that my late husband thought very odd indeed.)
I do like parsnip and apple soup but only because its actually a rather nutty flavour and I make my own in the winter.
Good job we all have different tastes though and variety is supposed to be the spice of life after all.

We all have our preferences. I really dislike porridge but love raw oats with cold milk! I like various fruits with meat, tinned peaches on pizza, and recently I had a wrap of bacon with a few microwaved frozen cranberries. I don't like jam straight on bread because I don't like the way it soaks in, so always have butter as a barrier. Another "must" is (lots of) lettuce with lasagne. Too gluey otherwise. I'm beginning to think I look quite eccentric!10
