kboss2010 said:I don’t often roast veggies but I might try that even to add to something else. Thanks!
I can't equal the amount you managed to use up the other day but lunch was quite a lot of the remaining tuna with a quarter of an avocado, some beetroot, the remains of a jar of olives and I forget what else.
I dipped into M&S on the look out for reduced things on the way home, and found runner beans, salad leaves and chillis marked right down, and I got some salad dressing as well so I made salad with all those except the chillis, and added grapes, tomatoes and grated carrot. Then I ate that while waiting for pasta to cook, and mixed the pasta with fava spread that needed eating, and half the remaining salmon.
The chillis will be sliced up and frozen.
So I've done quite well for variety and there is still space in the fridge. You should have seen how many prepped salads I resisted! Mind you, they still cost a lot more than I wanted to pay, and the soy and tamarind dressing on my salad was really tasty.I think a bit of sunshine is good for frugal living. (Cranky40)

Day 2 of avoiding shops. Happy with myself!!
Dinner was a loaded veg soup with fresh pasta I made with flour and eggs and garlic bread I needed to use up.
Lunches for this week have been chicken salad from fridge stuff.
I feel like I'm getting through some of the over bought stuff in the fridge. I usually go shopping at the weekend but think I can skip it.
Pasta sauce with those tomatoes if there are enough! Yum. Or just chuck them in soups or stews.

Day 3 of no shopping.
Tonight's dinner was pizza, I had pizza bases and all the toppings already at home. Served with a salad using up all the left over greens and air frier potatoes. YummyGrocery challenge:

Slight change of plan for dinner tonight. OH went out with his friends so I’ve cooked the leftover freezer fajitas with the microwaved defrosted tomato cheese sauce I made a while ago with some freezer garlic bread to enjoy while I watch Gardener’s World:Bf just got in from a night out and he would normally stop at the 24 hr bakery for sausage rolls, stovies & Mac n cheese & spend about £15 but in the spirit of saving money I used the last of the really good Bandit Bakery focaccia, the remnants of the ham and cheese for this week’s lunches to make us cheese & ham on toast instead.

Had to go to the shop yesterday but managed to just stick to what I need and spent £12.50 for a few basics - milk, yogurt, potatoes, fruit that sort of thing. Very pleased, I feel like I have started to tame the manic hoarding mama lady. 😁Grocery challenge:

I decided to make some quick homemade sesame naan this morning to use up the leftover Greek yoghurt.
I’ve made these a few times now and I’m not going back to store-bought naan!
Sesame Naan (makes 4)
1 3/4 cups of self raising flour
1 cup of Greek yoghurt
1/2 tsp salt
1 tsp each of nigella (black onion) seeds & sesame seeds
1 tsp sesame oil
(optional 1/2 a bunch of chopped fresh coriander)
Mix together, divide into 4 and roll out into 1-2 mm rounds. Dry fry in a hot frying pan or skillet until the dough is cooked and lightly charred on both sides.

Those naan look good. @kboss2010. I assume the coriander would just be mixed in with the rest if used?Frugalistamama said:Had to go to the shop yesterday but managed to just stick to what I need and spent £12.50 for a few basics - milk, yogurt, potatoes, fruit that sort of thing. So a very thorough re-cook seems in order.
I also got leeks so I think leek and potato soup during the week might help counter the rich living this weekend.
Today's dinner will be salmon, new potatoes, carrots and runner beans. Pudding will be tinned peaches with berries and creme fraiche.

@Cherryfudge Thank you! Yep, you just mix the chopped coriander in with the dough. You can also butter them with melted ghee or butter when you’re ready to eat them.
I sometimes use up stale bread to make garlic bread by just glazing some French bread with melted butter & garlic granules and/or rosemary or oregano and toasting it. You could try that too for extra flavour.“I want to be a glow worm, A glow worm's never glum'Coz how can you be grumpy, when the sun shines out your bum?" ~ Dr A. I confess I've just added nigella seed to my online basket.
I've also been gardening and noticed the ground elder invasion actually smells really interesting so I've copied out this recipe to have a go. I will also be adding a bit of hedge garlic to salads soon - I tried a nibble last year and it's really tasty.I think a bit of sunshine is good for frugal living. (Cranky40)
