    I always see interesting things on this thread! I had to Google Asian cucumber salad, I had no idea you can freeze cucumbers. Mind you I freeze melon...

    I also keep meaning to look up how to freeze eggs as we never get through a box without having to try the float test on the last ones.
    I think a bit of sunshine is good for frugal living. (Cranky40)

  • I think I need to join this challenge as I have 2 full freezers, many full cupboards and an Armageddon stash under the stairs that really should get used up before I buy anything else. 
     I can't face freezing my fingers by getting everything out of either of the freezers to inventory them and I'm not sure if I'd get everything back in if I did so I'm going to start at the top and work my way down. Wish me luck!

    First thing out today is a bag of diced squash which I will use to make soup for lunch. I know there's a fair few burgers in there as well so I've added burger buns to my shopping list. I've made a start. 👍

    We are clearing our freezers too. Two small ones. We want to run them down, and switch one off ,save some leccy and have a proper turnover. So tonight we are having two Aldi chicken ‘steaks’ some Aldi ‘dips’ that my wife loves,jacket spud ,homemade coleslaw ( lovely!) and and my favourite pickles. Simple and tasty. To us any way. 👍

    cherryfudge---sorry, i don't freeze cucumbers.  I simply let them decay into mush and mold in the back of the fridge about 90% of the time.  So using them is a victory!

    I found two large tubs of fresh spinach on the verge of going over in the fridge in the garage ---cooked one and ate it for lunch.  I'm going to cook the other to go with dinner.  I often end up throwing spinach away as well.  Food waste is my worst worst character flaw.

    That's my technique with cucumbers too! :D 

    Spinach will freeze, though obviously it breaks up once frozen - handy to add to curries though.

    Lovely seeing some new names here.
    Belated Happy New Year!
    I'm also planning on eating mainly out of the freezer and cupboard this month.
    Planning on putting money i save in on of those savings wallets in one of my bank accounts. Hoping to use in allotment for growing my own.
    So this week out so far from freezer: allotment green beans, octopus tentacles, 2portions hm "ready meals": lamb and green bean stew with bulgar wheat, lamb and chickpea curry with quinoa. Beetroot slices (allotment). From cupboard: tin green lentils, bulgar wheat. 
    From shed: potatoes (maincrop harvest from last year still!)
    With spinach @snowbird20, depending on what you use it for, might be better off keeping some frozen spinach instead of all fresh bags. 
    @mumf and @Ginmonster i'm also hoping to empty the small shed freezer, at least till end of summer harvest on allotment. 
    It's good for the soul to walk with your soles on the soil.

    Defrosted our under-counter freezer today, it's only got three drawers but is big enough for the two of us. We'll do our first main shop of the month tomorrow so currently the top two drawers are full of empty boxes, cartons and scrunched-up plastic bags. The lowest one's got some spinach, parsnips, sweetcorn, peas, pitta bread, cooked green lentils, half a loaf, some home-made pastry left over from making mince pies and a few veg sausages, soya nuggets and 2 veg sausage rolls. One drawer will be filled with 3 wholemeal loaves and that'll last us at least two weeks. I'll batch cook some spreads for our lunch sarnies and bung them in too as they freeze well. It's a small kitchen so I can't store too much in the cupboards, right now there's about 6 tins, some sugar, cocoa, flour, herbs and spices, dark chocolate, granola bars, sultanas, almonds, lentils, nooch, sun-dried tomatoes, yeast extract, oats, pasta, one carton of soya milk and a couple of bottles of DH's favourite beers he always buys 'for Christmas' then doesn't drink for ages.

    @carinjo my husband has a fetish for fresh green veg.   i just got carried away buying 2 boxes.  but we ate them both.  and they were yummy.  :)
