My sister has given me a pack of pigs liver (500g) use by 17th. I usually do the regular bacon, onions, gravy, mash thing - but was wondering if any of you good folk had any ideas for something a little more exciting.

Out: wholemeal flour, plain flour, yeast, all for a no knead loaf. Day before was more flour and herbs for a chicken stew in slow cooker with dumplings. 2min noodles, tin fruit cocktail for work dinner.
In: nothing, trying to use what i have. Sprinkled sumac over a stirfry the other day. It worked, just about.It's good for the soul to walk with your soles on the soil.3 -
In: Pack of filo pastry, 2 aubergines, pack of tongue, 2 bags of spinach, 3 opened bags of herbs (various), bag of lemons, loaf sliced bread and some scones - the event I went to last week was giving away the food and it would have been rude not to take some
Out: Spanish omelette, veg soup, gyoza and chicken thighs - one of the aubergines is now in a veg curry in the slow cooker, and the spinach, herbs and the filo pastry is earmarked for spanakopita tomorrow.2024 Fashion on the Ration - 10/66 coupons used

300g belly pork chopped or cooking bacon and pork mince.
2 medium onions (peeled and roughly chopped)
50g sage and onion stuffing mix
1 egg (beaten)
salt and pepper
Method:
oven Gas Mark 4/180°C/350°F.
Process the meat and onions in a food processor until finely chopped.
Takes ages by hand but can be done.Mix with egg, seasoning and stuffing.
Shape into 12 balls.
Bake in oven for 45 mins. You may want to cover them with oiled foil.
Make an onion gravy, and finish them off in the onion gravy for 10 mins.

I did eventually find a recipe for a kind of spicy casserole in the Complete Cooking Collection, so will probably make that, but will keep your recipe for when I finally get a food processor.
