Just made a simnel cake for tomorrow out of an out of date M & S Christmas cake kit, some free eggs and an orange from the community fridge & a packet of marzipan from Lidl - total cost not counting electricity use for baking, £3.20 cake weighs 4lbs 11 ozs, any bets on how much more I’ll weigh after Easter?7 -
The batched frozen cooked meals have proved very welcome so far this Easter Hol.
We have had no staff from last Wednesday through to next Wednesday. It's been just Dh and myself and there's all the work to do. We're not that early in starting, 8.30am is about right and tonight we came in the house at 7pm.
Lunch was a quick sandwich - defrosted bread and chicken with salad and some frozen walnut and coffee cake batter made into muffins - cooking whilst we ate the sandwiches. DH's tea was defrosted chicken/mushroom/bacon casserole quickly covered with pastry to make a pie. I had defrosted parsnip and apple soup. Pudding was defrosted rhubarb crumble, heated in the microwave and custard.
Thank goodness for a freezer. I go 'shopping' every morning in it to get out the day's supplies.4 -

I've been 'away' for the last week with Covid, meaning DH has done the shopping and using up. We did finish up some curry leftovers but apart from that he prefers to shop daily so I expect no real change in the state of the freezer! My small contribution has been eating my way through some sweet potatoes.
Looking forward to getting back into the swing of things!I think a bit of sunshine is good for frugal living. (Cranky40)
