I'm looking for a goose to practice on now. I've ordered one for Christmas but I cannot find one to buy online. I've not gone into the stores myself, though. I'll do that but is there anywhere online that stocks goose that I'm unaware of? Thank you.

Yes I can get to a Lidl. Good shout, thank you. I'll go there tomorrow. The reason people don't move right down inside the carriage is that there's nothing to hold onto when you're in the middle.1

Lidl or M&S0

Thank you so much. I'm at Lidl and they have them.
They are huge. Feed 8 to 10 people. I may need to keep it 24 hours in the fridge to defrost before oven time. The reason people don't move right down inside the carriage is that there's nothing to hold onto when you're in the middle.0 -
I know directions say 24 hours in fridge to thaw but things usually take longer in my fridge so I generally allow 4 hours out to come to room temperature prior to roasting. If you think of it fresh meat would either have come out of butchers display window/refrigerated underneath or in the case of poultry off a hook.1

I have always found that frozen whole birds take a heck of a lot longer to defrost than the directions say. I don't know when you plan to cook it (for lunch or for evening) but I'd definitely have it out of the fridge overnight, inspect it carefully in the morning, maybe a day in the fridge, check it again and out all night again if still ice crystals inside. If at the end of that day you think it is defrosted, it won't come to any harm in the fridge overnight.
You can speed things up by putting it in a large bowl of cold water if necessary.Signature removed for peace of mind3 -
Aha, thank you both. I'm cooking it this Sunday. I'll put it in the fridge this morning, then and then I'll take it out to room temperature tomorrow morning, inspect it tomorrow night and if it looks doubtful, I'll leave it out again all night Saturday night. I'm using a recipe that takes 7 hours to roast it so it should be ready and yummy for Sunday dinner!
Thanks so much for your tips. The reason people don't move right down inside the carriage is that there's nothing to hold onto when you're in the middle.0 -
I take it that you don't have a cat!3

Let me save you some money: dont bother with a goose at Xmas. Yes it smells nice cooking and yes, it tastes nice, but the whole thing melts in the over and you barely have any meat to actually bother with once it comes out. Back to a turkey this year after last years experiment.3

I once had goose for Christmas dinner, but I was living alone. Like emmajones1976 I didn't have much meat on mine either, never bothered again.1
