    You can make a quiche with a mashed potato base, much more filling than pastry. I brown it off briefly in the oven before adding the topping. 

    If you do want to make/buy pastry you could make veggie pasties (mash, carrot, onion, cheese, thyme?)  and freeze them for future use. 

    Make your own oven chips? Pre cook jacket potatoes and then freeze. 

    Heaps of things you could do, depends on the freezer space you have. 

    meantime, store the potatoes in a cool, dark place and they'll last a good while.

    What variety of potatoes are they? 

    Some varieties are more suited to cooking methods than others.

    I don't think anyone's mentioned samosas yet, but that's another delicious way to eat spuds. 
     
    There's also the popping your mash into a piping bag type of thing if you want a showstopper like this.

    The video is courtesy of Prep, Cook, Serve Potatoes who are based in Warwickshire, I'd never heard of them before so I'm pleased to have run across them on YouTube. Could they be the Potato Marketing Board in a new guise?

    just to boggle at the presentation if nothing else although I do think they're being a shade optimistic about the preparation times they give. I made Potatoes Anna once many years ago and to my recollection 10 minutes certainly wouldn't have been nearly enough time, I think I took at least an hour and many curses!

    Thanks, everyone. So many good idea here! I'm meal planning this afternoon so I'll write them all down then and see what I want to try first! 
    (just because someone asked I eat dairy including eggs, but no fish, fowl or animal)

    I make a veggie hash using cooked and chopped potatoes.

    But first brown some chunks of onion, set aside and brown the potatoes. Add any veggies you like, peas, green beans, pepper, broccoli etc al dente, spinach or chard and when its all warmed through return the onions and diced feta. Possibly some olives. 

    Also nice with leek instead of onion but I slice and cook gently rather than browning.

    This sounds like it would be nice with aubergine and courgettes (I think it was the mention of feta and olives that took me to Greece  :) )

    Yep, the basic is pretty versatile, courgettes, aubergine and peppers, but not stewed, with olives. Or peas, green beans and broccoli, with either pesto or basil. Or just plain.

    If you're not veggie, a little chopped bacon, or a couple of anchovies.

  • Spanish omelette - simply divine and lasts in the fridge for day to pick at :) 
  • A few more ideas;

    Pierogi (potato and sour cream filling is lovely, this won't use loads of potatoes but I thought it was worth adding) 

    Gnocchi/kopytka/kluski slaskie I prefer the Polish style potato dumplings with gravy, they are amazing with pickled red cabbage and stuffing. 

    Placki Ziemniaczane these aren't the healthiest but are beautiful with some sour cream. 

    Kugelis I have only had this once, it is very filling.

    Pyzy I have these filled with meat but I think a mushroom filling would be amazing

    Knedle these are a sweet version of pyzy.
