    I've made some very nice potato soufflés before now and this is one recipe I can recommend as being very reliable.
    Leek, Potato and Cheese Soufflé | Recipes | Delia Online It says it serves 2 but if you add some vegetable side dishes like baked onions, tomatoes or peppers etc. it goes much further.

    PS if you don't have a soufflé dish a well buttered deep cake tin will do at a pinch.

    There is also this Delia recipe which I have had great success with, it sounds unpleasant on the page but is delicious to eat and there is a video of how to make them too. Chocolate 'Surprise' Cup Cakes | Recipes | Delia Online

    Potatas  bravas  ! Yum 😋 really easy .can add cheese to top and put other veg onion and peppers if wanted. 
    Greek Briam if you like courgettes. Both freeze well if you make a batch and freeze.
    most potato recipes would freeze so can always make extras and throw in freezer.
    Focus on contribution instead of the impressiveness of consumption to see the true beauty in people.

    Oh goodness my late Gran used to make this some 50 odd years ago bless her - my late Mum used to think Gran was hard up as not putting meat in.  I loved it!!!  So guess what's on my weekend menu.

    It's a wee bit more fussy than mine which is basically blanched spuds cheese sauce and cubes a ham layed, sauted onion.....don't add peas just serve with veg like broccoli

    Make Hasselback potatoes, no matter their size. You can even stuff the slots with cheese. Yummm.

    Serve them with veggie chilli or whatnot.
