Potato based meal ideas?

Hi all,
I bought a huge sack of potatoes from L!dl this month and have barely touched them, so I need to think of some cheap, and preferably easy potato based meal ideas for November. Ideally meat free as I 'm veggie as well.
So far I have baked potatoes for lunch, potatoes in soups (sweetcorn, leek and potato), Irish potatoes (boiled pots fried up with frozen cabbage, onions and butter and other green bits), wedges with burgers/eggs and beans, veggie sausage and mash, and potato scones (which are more of a side with a cooked breakie)
Does any one have any other ideas? Google is not inspiring me!

Thanks @Kinga I thought about Spanish Omelette just after I posted. I always forget about curries for some reason. I'm not fond of very spicy stuff, but I do like a mild curried dish and potatoes are lovely in one.Live the good life where you have been planted.

scalloped potatoes? or dauphonaise? assuming you are ok with dairy?
depending on how veggie you are (I've met ever shade over the years so know for some it's a flexible term) there's a marvellous scandanavian dish call Jannsons frestelse which is like scalloped or dauphonaise but has the added punch of sprats or anchovies. Perhaps there's a veggie substitute for the fish if you don't eat those.

Shepherds pie variation with a bean or lentil and veggies base and mash on top.. Or with eggs veggies and a creamy type sauce base (fake fish pie)
Do you eat cheese? I used to love sliced potatoes layered with onions and cheese and then a mix of egg and milk poured over and baked in the oven. I must make that again....... Not sure if this would work with the vegan cheese and milk substitutes but worth a try perhaps.Decluttering, 20 mins / day Jan 2024 2/21 -

I would personally avoid spicy dishes as there is only so much of it you can eat before you're done. I'd boil them in small batches and keep in the fridge for an anytime snack. Not the most interesting but surprisingly tasty reheated in the microwave with a dollop of your favourite condiment on the side.
