Thanks for all the responses guys. Do you think I should just contact the information commissioner straight away or email them first and wait? I have a copy of there privacy document saved on my computer which clearly states that the email address I used was the one to contact in regard to this matter. I could pass that to the commissioner also?0

Regards is not a formal sign off. It's what people have fallen into using in recent years but Umkomaas is right.
Save the ICO complaint until you have exhausted the matter with the PPC first. The ICO will want to see that you complained.

Update for you: They replied to my original email (eventually but within the timeframe I gave them) stating they had updated there records accordingly.
Then I got this in the post, lol! It's address to my new address and wasn't a redirect. What should my next move be? Appeal the parking charge on the basis the parking machine only accepted coins with no alternative and, due to us just coming out of lockdown and being told to use contactless everywhere, that coins where unavailable. Or handle it in a different manner?
I'm concerned because I had to contact them with a Data Rectification notice that it may change my options.

At the Bradford County Court, District Judge Claire Jackson (now HHJ Jackson, a Specialist Civil Circuit Judge) decided to hear a 'test case' a few months ago, where £60 had been added to a parking charge despite Judges up and down the country repeatedly disallowing that sum and warning parking firms not to waste court time with such spurious claims. That case was Excel v Wilkinson: G4QZ465V, heard in July 2020 and leave to appeal was refused and that route was not pursued. The Judge concluded that such claims are proceedings with 'an improper collateral purpose'. This Judge - and others who have since copied her words and struck dozens of cases out in late 2020 and into 2021 - went into significant detail and concluded that parking operators (such as this Claimant) are seeking to circumvent CPR 27.14 as well as breaching the Consumer Rights Act 2015.
