Will I still be able to register it for the Huawei 2 year guarantee and use seller as my retailer?

You can't 'use the seller as your retailer'. But if the seller hasn't registered it themselves and supplies you with their receipt or proof of purchase, then you should be able to register it.
It may not be necessary to register upfront it to get the 2 year warranty (it's usually just a way of extracting marketing data from you), but if you do need the warranty in the future then you'll need proof of purchase.No free lunch, and no free laptop0 -
The warranty starts when the phone turns on and is registered automatically the first time the phone connects. (‘Activates’)

Did they explain why they were selling a brand new phone?
It can be a bit risky to buy phones from private individuals that are "brand new". This is because some people when money is tight take out contracts and sell the phones to raise some quick cash and then don't pay it so they become blocked after a month or two. These are commonly described in the description as an "unwanted upgrade" which is obvious nonsense because upgrades to contracts have to be agreed and the price is usually higher than a sim only with the current phone so there is no logical reason why someone would have an "unwanted upgrade".2
