All that is needed is a copy of your V5 .... this confirms the information they have already otherwise they could not have contacted you. Plus a redacted copy of a utility bill1

Nexus is an unknown quantity. I don't think the ICO would ever suggest sending such sensitive material, they of all people know the dangers2 -

You can ask the ICO for advice , but better to then report Nexus after 2 failures to provide the data due to their ludicrous requests
I would have provided 2 or 3 forms of I D with your wife's name , address and date unredacted , including a copy of the claim form as the clincher as one of them

Ha ha , she is not the only person to make that mistake , we have seen worse , although why anyone would destroy legal papers from a government office is beyond us. DVLA , HMRC , DWP , all legit government agencies , as are HM courts
Default CCJ with 6 years of credit rating issues follow those actions in many cases , which cannot be fixed1 -

When you win, you will get a letter from the court ..... ask your wife to frame it4
