There is likely many more non-vegans that accept meat and other animal products are bad for health / environment (even if they’re not willing to change) than there are vegans, simply because the number of vegans is a very small percentage of the population.
It's a matter of whose science do we listen to? Follow the money to see why people are advocating anything on any subject. I know from personal experience what has worked for me with regards to health risks and fitness.
Regeneratively produced grass fed meat is more nutritious than meat from animals fed on grains and other rubbish. It's a matter of whose science do we listen to?
Food companies have a history of funding biased research to support their products. Biggest being the sugar, meat, dairy and egg industries.

I disagree with your first comment too. I feel that Vegans have "broken" the general cycle to eat / consume meat products in today's modern society and are more likely to be switched on to health and environmental issues. Some will be fixated on animal cruelty yes, and whilst not a vegan myself, I do agree the treatment is pretty much horrendous. But I think they're more likely to also be aware of additional benefits regarding health and the environment because they would have researched the topic before changing their diets and consumer choices.
But yes agree with your last point, I think deep down most people can easily follow the science and see mass consumption will end up causing serious issues for us and our planet down the line. Perhaps we're just thinking "enjoy it while we can" sort of thing!
I don't know what the answer is but I'm sure over the next few decades things are going to change drastically about how we act as a people / country.
