Contacting Ryanair

I booked Ryanair flights to France back in January. I was supposed to fly in August to France but could not go due to the isolation restrictions. I had travel insurance with a 3rd party that stated I was able to claim if there was an FCO warning against all but essential travel (which there was). The insurance company paid out for my accommodation but said they need evidence I cancelled or did not travel with the airline. 
Unfortunately Ryanair would not allow any sort of cancellations and the flight went ahead. I tried contacting Ryanair through their website but just got a standard reply a month later about what to do with vouchers. I emailed them again and a month later I received another, slightly different, standard letter that does not address what I'm asking in any way.
All I need is a simple letter saying I did not use the flights but this seems impossible to get.
Has anyone actually found a way to contact a human at Ryanair, instead of various automated contact methods.
