Brownies

 I know brownies are easy to make but have you the perfect recipe?
I can get the top right or the middle but can't seem to get both, help!!

As of today 180919. my granddaughter is now my official granddaughter, adoption finally granted

    Did you watch the GBBO last week? The remarks were brutal, but you may get some tips from them. I don't remember any over-narration offering the secret to one.

    I used the recipe on the bbc website, dont make them often but they always turn out well.

    Thanks, ladies,
     I make them often as my grandchildren love them. I have always used the Bero recipe but was looking for tips to get the combination of a  tacky middle and crusty top.

    I use this one, and often get told they are the best ever tasted (which is why I asked my cousin for it). You can tell it's been well used! Perfect squidge/crust combo. But not exactly moneysaving!

    I don't know how much it differs from a brownie recipe but we prefer the chocolate fudge recipe from the Jimmy Young cookbook. My son has eaten way too many brownies and he really likes the taste and texture of this one. I inherited the book from my mum and the recipes in it are cheap and simple.

    What a disaster that was!
    The message that came over loud and clear was - don't over-fancy something that should be simple.

    Sorry, OP, I don't have a recipe. But I suggest you leave out the dates, pistachio nuts, the meringue (yes, really) and all the other unnecessary stuff that shouldn't be within 5 miles of a brownie. ;)

    This easy chocolate brownie recipe has never let me down! Every time I make it, it turns out soft squidgy and fudgy - everything you want from a chocolate brownie recipe!

    PREP TIME 15 minutes COOK TIME 40 minutes TOTAL TIME 55 minutes

    Ingredients

    225g butter

    100g cocoa powder

    heaped teaspoon of powdered coffee (add to the cocoa)

    4 large eggs

    450g sugar

    1 capful vanilla extract

    150g self-raising flour

    Optional to add :

    A sprinkling of chilli powder/few drops of tabasco

    Some broken up pieces of walnuts (about 3 handfuls) (add to the flour)


    Instructions

    Preheat the oven to 180 c. Mine is fan and 35 mins is plenty

    Line or grease the baking tray you're going to use - a rectangular tray is best for brownies - mine is 9”square and nearly 2” deep 

    Melt the butter in a pan and then stir in the cocoa powder

    Set aside while you make the rest of the recipe. Resist urge to taste!

    Whisk the eggs, sugar and vanilla together until they are pale and foamy

    Stir in the cocoa mixture, chilli and the flour and give it a good mix together until it's all combined. Add the nuts if you are using them

    Pour into your baking tin and bake for 35 - 40 minutes, until the middle is not moving separate to the sides when you wobble the tin. They will rise is the oven then fall when you take them out out. As long as the middle is set this works. 

    Let them cool in the tin (it is why I use paper to line) then lift out onto a board and cut into squares. You could dust the top with icing sugar but we don’t
