From Gladstones; an acknowledgement that it is on hold for 30 days?

That's what the thirty days are for, preparing defence and gathering any evidence you need (and of course seeking debt advice!).2

I received a response from the parking company. They sent the original parking ticket, my original appeal and their response and my latest email. Nothing else.0

Then that is all they can use , or have , because if they had pictures or anything else that is your data then they should have produced it under GDPR law
If you believe there is more paperwork or pictures , write back and demand them , giving 7 days to reply , not 30 days
Check the paperwork and look for issues or errors
Then get on with preparing your defence etc , like le Kirk said above1 -
They have pictures from the ANPR cameras which were on the original ticket which obviously show my car entering and exiting. They didn't send the pay and display ticket machine records but I guess that isnt specifically my data. They didn't send the information relating to the popla appeal but I guess that isn't specifically my data either.

Send a SAR to POPLA asking for the evidence pack and other data held. I've seen POPLA release entire evidence packs in response to a SAR.PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).
