I offered her 30 but she has not accepted. she wants 500

She messaged me about 20 minutes after the appointment should have started i live round the corner. I did forget. Which I accept is my fault. I had gone out so could not get back quickly enough to catch the appointment.0

if i bought a product at a shop and paid ten pounds I would not expect to take it back and get more money than I was originally charged. The issue is not the fee it the inflated price.0

as I had not agreed what I wanted or the fact that she had charged 40 for the same service to someone else 🙄0

The other customer's pricing is none of your business.
Given that you not only forgot the appointment but didn't realise until after the scheduled time, I think £50 is a reasonable charge.
You keep mentioning the other customer and the costs the hairdressers hasn't incurred, but you have no idea whether your appointment slot might have earned her £50, less than that or perhaps even more.
Your mistake. Suck it up as a lesson learned.1 -
Ask her why £50.
What would your visit have cost you minimum? I would pay this amount. If £30 was the cost of a haircut then £30 is fair enough. If £50 is the minimum treatment cost then pay the £50.
If she had not arranged any patch test then she can’t charge you for hair colouring that might have happened.Should've = Should HAVE (not 'of')
Would've = Would HAVE (not 'of')
No, I am not perfect, but yes I do judge people on their use of basic English language. If you didn't know the above, then learn it! (If English is your second language, then you are forgiven!)1 -

The hairdresser's loss is whatever profit she would have made on the appointment, whether yours or another customer's. You can bicker about it if you want, but is it worthwhile? Do you want to use her in the future?

No it really did not fill me with confidence.
