Would you suggest I upload a copy of the PCN (redacted of all sensitive info)? That would help determine its PoFA compliance. Please note, we are not a legal advice forum. I personally don't get involved in critiquing court case Defences/Witness Statements, so unable to help on that front. Please don't ask. .
I provide only my personal opinion, it is not a legal opinion, it is simply a personal one. I am not a lawyer.

..that is the main reason I'm considering paying the £60 to avoid it being £100+ at court
That is assuming that the judge finds for them. From what you have told us tfar from a given. Judges are becoming familiar with this scam.

Interesting to see that their Appeals page includes:Please provide the reference number, the driver’s name & address, and any information that may assist us with our investigation. Correspondence submitted without all the requested information will not be addressed.
So they won't process an appeal, or indeed any correspondence, without the driver's name and address.

"Signage will be an issue, I will have to go back to the parking spot - a 4 hour round trip. The signage on google maps street view is certainly different to what is there now. "you may be able to see past signs ....google street view1. Drag and drop the yellow ‘Pegman’ onto the desired street. (To do this, left click on the yellow man at the bottom right of the map and, keeping the mouse button held down, drag him across the screen, only letting go when you are on top of the road or place you want to look at. If it doesn’t work for you the first time you will need to try again!).
2. When the man lands, the map changes to show you street imagery, and a dark grey box appears at the top left of the map. Click the tiny clock symbol in the dark grey square – see screenshot below.
3. Use the slider that appears to go further back in time, then click on the small map above the slider. Street View will then show you historical views. You can change the year by clicking on the slider again. You can also navigate your way around Street View just as you would in a more up-to-date map.
4. To exit Street View, click the back (left) arrow in the original dark grey box.
5. N.B.Historic imagery isn’t available for everywhere in Street View.Ralph

A 4 hour round trip .... well, sounds like a great destination. I think I'd want the images in my possession as soon as possible, for peace of mind.
