I hope you got the employer's confirmation by email (not over the phone) as you will later need to file evidence that your reg was exempted and given to OPS, and a phone call doesn't evidence that.

Hello Again
I have spoken to my client and he is sending me confirmation email regarding the tickets. Below is extract points 16 and 17 from the coupon mad template. I am unsure of what else to add?1. The Defendant was the driver of the vehicle in question and was an authorised patron of the onsite business. The claim relates to an alleged debt arising from the driver’s alleged breach of contract, which is denied. It is further denied that there was any agreement to pay the claimant for any PCN’s issued.
2. The Defendant had parked his car to attend the business based on site. Having had permission from the business owner he was safe to do so and would not require a parking ticket. The business owner had an agreement with the claimant whereby the registration numbers of the business owner’s patrons would be exempt from parking charges once the registrations had been passed to the claimants.

Paragraphs 16 & 17 are there for you to add in your defence arguments against the specifics of your circumstances, so only you know if it is sufficient. If the particulars of claim are that you didn't have a ticket, you seem to have answered that because you had permission from the business owner, this is called promissory estoppel, a well known argument in court.4

Yep, and it should be explicitly stated as such
The landowner authorised you to be there. That is a superior offer to any the PPC can claim to have made AND they are estopped from action anyway.5 -
