Hi I am new on here. I have been working down our freezer ( or trying to) for 6 weeks now. Today we had the pork joint that has been in there since Christmas. I know! very hot for a roast but it had to be done! My problem is that there are only 2 of us. I cut a large joint in half to freeze when we bought it half price but still loads left. So we will have pork and apple sauce sandwich tomorrow lunch time and I have found a sweet and sour pork recipe that looks nice to have with egg fried rice for dinner

Another week, another use it up meal plan!
Well last week we did not do the pesto past again, so I'll drop it off the list for now! Meals got switched around a bit as some of the groceries were strangely short dated! Ragu was not made and the mince for that is now in the freezer.
So this week's plan, which involves keeping the protein high and getting more greens in...
Monday - Veggie Day - Cauli-cheese with some courgette on the side (courgettes with everything season has started)
Tuesday - Fish Day - Leftover cauli-cheese with battered haddock and steamed green/purple beans
Wednesday - Chicken Day - Chicken thigh burgers with fried chicken sauce & mushroom croquettes
Thursday - Meat Day - Tepsi kebabb with salady bits and shelf-stable naan
Friday - Fakeaway Day - Pizza with anti-pasti & assorted dips
Saturday - Easy Eating Day - Brunch will be avo & poached eggs & asparagus - Dinner the usual gyoza/bao/noodles & tatsoi
Sunday - Roast - Pork medallions & carrots & potatoes & broccoli
Next Monday - Veggie Day - something leftover from the freezer - possibly pasta with veggie sausage
Lunches - three in the city this week and will make use of points & coupons to buy meal deals - worked out well last week - MrS meal deal, B00ts meal deal & PizExp lunch deal with a piece of free cake. Suprisingly I was able to work in veg and protein and the focus of each meal! Sure beats lugging food in when it's hot & I get in some steps to go pick it up! Instead I take in a bottle of ice water and a portable fan!4 YEARS 10 MONTHS DEBT FREE!!! Gosh @JingsMyBucket, what a lot of variety in your use-it-ups in your fridge, freezer and cupboards. Well done for looking to clear your fridge. I believe you could freeze the wild garlic pesto, along with the naans if you need to preserve them for a bit.
Ours is a much simpler set of ingredients, from which our use-ups are coming. We are down to some bought salad in the salad veg drawer, a few potatoes and some cabbage. The only carrots are now from the garden, where chard is over plentiful. Beans and courgettes need picking daily, as do cucumbers and tomatoes and raspberries. I just pull the frozen raw meat or fish from the freezer on a daily basis and let it defrost, having portioned it into smaller bags.
The exception is lamb. Having taken half a lamb in part payment for some beekeeping equipment, the meat freezer is stuffed again. I think today will be a piece of fish (I have cod or salmon in the kitchen freezer, so one of these) though, with steamed and buttered runner and purple French beans, and newly dug potatoes.
I will do a top up shop from Morries today, to get £5 off £40 and 10% off Market Street, because we are off in the motorhome on Thursday until Tuesday, and I will need fruit like apples, nectarines, peaches and apricots plus milk and eggs and a bag of stirfry (pre-prepared) for simplicity while awaySave £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

For the chocolate banana bread, I’ve started drizzling peanut butter down the middle as a topping. It’s covering all the delicious bases that way.@Suffolk_lass, it’s like I’ve got my cooking mojo back again, thank goodness. The lamb shoulder is slow roasting in the oven right now since I started it way too late tonight. But it’ll be great for lunches and dinner tomorrow evening.4 -

Long time no post. I was trying to read all the posts here, but have given up (reading stuff about how to manage leftovers from Christmas is not hugely inspiring at this time of year! 😉😂) and will follow on from here instead 😊
I am riffing on wild rice salad atm. I started this as I don’t want to eat frozen chips or wedges with Mr KK any more. I cook 60g of WR and then finely chop a shallot and dress with an olive oil, red wine vinegar and Dijon mustard mix. I have half the first evening and then the second evening I mix the leftovers with chopped gherkins and put some red cabbage on the side. Works really well, fits in my week easily, adds fibre and protein along with a few more plant types and tastes good 😊

Right, back from our travels and we have defrosted a very large, bone in rib steak (or Sunday joint if you talked to my Mum!) that came away in the motorhome with us. We have lots of salad to eat and fruit for desserts. I am going to ignore the ice cream in the freezer and we are back to eating with few carbs beyond vegetables. Both gained 5lbs in a week!
