Woo hoo - we have groceries coming today - very proud that we went a whole month without a main shop being done.  Unsurprisingly our freezer is still groaning so we may attempt the feat again!

The pasta carbonara was delicious - though the mushrooms did not make it in. OH has been left with instructions to use them up in his morning omelette!

The only downside to having skipped a main shop is that my work pack up today is missing the bits we ran out of - choc rice cakes and seaweed, which I can pick up on the way in but know I won't! Let's hope I make an intelligent choice when the munchies hit this afternoon!

Dinner tonight will be breaded cod, potato salad and steamed carrots and beans.  If it is still warm outside afterwards, we will go for a stroll and pick up an ice cream! If not, there is health bread (seed cake) in the freezer that can be warmed and buttered.

Very lucky today at work (catering had some left over food as they'd had to cancel lessons due to staff absence). Got 3 packs of mince, 2 packs of sausages and 2 sausage meat as well as 4 bunches of spring onions and a bag of carrots. Turned it into 3 tubs of mince base with spring onions and grated carrot (will use it for spag bol, savoury mince etc). Turned the sausage meat into meatballs and cooked the sausages ready to freeze.

That's great @Mrs_Cheshire - over here I cut four circles off a stick of sausage meat (bought in December!) and made road-kill (ie flattened) toad in the hole and as there were just the two of us, we might have a pancake for lunch as there is leftover batter.

It's been pretty quiet here. Has everyone been busy in the garden?
We were away this past week in Dorset. Had a lovely time exploring the coast and enjoying the sunshine.
We drove past a shop that was advertising British Mozzarella, had to turn round at the next roundabout and stop off. Turns out they make it on site with their own water buffalo herd. They also sell the meat.

Meal plan for this week is
Saturday - chicken slices, chips, peas/corn
Sunday - creamy wild mushroom chicken with pasta and green beans
Monday - Buffalo/beef stew with mash and broccoli ( I got the buffalo whilst travelling back from Dorset on holiday)
Tuesday - chilli con carne and rice
Wednesday - sausage rolls, alphabets and beans (just hubby and the kids as I've got a meeting)
Thursday - pizza (ready made bases, store cupboard pizza sauce and buffalo Mozzarella (from the holiday)
Friday - bbq chicken & risotto

Everything except the fresh veg and potatoes we already had in the freezer and store cupboards. Lunches will be frozen leftovers for me and toasties/egg/beans etc for hubby.

  • I would love to join this thread. I need the encouragement for sticking to a meal plan! Today is a bit of a use up day as getting shopping in later.

    Today is as follows:
    - Breakfast - toasted bagel (last in the pack) with leftover grated mozzarella cheese, glass of oj

    - Lunch - tbc , depends how I feel after doing the big shop , even if it is just a click and collect 🤣

    - Dinner - chicken, paxo stuffing, roast potatoes and runner beans. The potatoes will be used up as they are these fiddly small ones that take ages to peel. The paxo I found when clearing out a cupboard last night so  that's a welcome find to go with the chicken. The runner beans are on the shopping list so they will be in and out of the fridge in a few hours 🤣🤣

@crazybunnylady4 - welcome!  - we all need a bit of encouragement to focus on what we already have in the house & use it up before buying more!

Yesterday we successfully used up 4 red peppers that were lurking, a rather large eggplant from our veg box, the remaining 1/2 jar of tahini and two lemons. We now have a small vat of red pepper houmous and a small vat of baba ghanoush to finish up but at least it is in lazy person format and can just be eaten!  Those two dips were added to all kinds of bits we had in the house to make up a meze platter along wit some reheated awarma - perfect summer food pickety bits.

Lunch today was left over home-style tofu and jasmine rice and some of the two dips with carrot sticks and crackers.

Tonight we will use up a ricotta and red onion tortellini from the freezer and the remains of a pork roast.  Not sure yet what veg we will have with it - perhaps a simple side salad will do.
