As I was cooking dinner last night, DH came in from the garden and deposited a large number of peppers and jalapenos that he'd harvested. Cue an evening spent chopping and pickling them as well as roasting up all the leftover veg in the fridge which was then thrown in the blender to make a tomato and pepper sauce. Chucked this in the freezer ready for when we get back from holiday and we can add it to a pasta bake or something.
Tonight's dinner is the last of our Gousto meals and then the fridge is looking very bare, but the freezer is full of stuff!Emergency Fund - £8572.39 / £10,000 :: Mortgage OP 2025 - £LISA 24/25 - £3200 / £4000 :: NSD 2025 - 2 / 150 :: Books Read: 1 / 52 :: Decluttering - 4 / 1000Engaged 9th December 2010 :: Married 29th October 2015 :: Bought a House 13th January 20172 -
Pheasant casserole from the freezer, I'll do jacket potatoes.
Blackberry and apple crumble from yesterday and then I'll freeze the remainder in 1 person portions. I should get about six portions to freeze.
Opened a bottle of wine yesterday and forgot to put the cork back. I've just run it through a sieve as I spotted a floating fly. Not sure whether to tip it down the sink or use it for cooking.1 -
As you've sieved it I'm sure it'll be fine for cooking.2

I had a superb little haul at my pet garage tonight. They stock COOP products and I get stacks of stuff there. 4 packs of cod fillets reduced to £1, 4 packs of king prawns at £1 each and 23 bags of scampi fries for 10p each ! I was exceptionally pleased, almost made up for missing 10 packs of £1.50 mince yesterday.
my menus revolve around what's in the fridge, what I've acquired and what's cheap4 -
A lot of reverse planning occurring here right now! The half shoulder of lamb has come out ready for a roast dinner tomorrow, and at the same time I took out a portion of mince and a pot of redcurrant purée. The purée will do ice cream tomorrow - probably alongside some raspberries bought YS’d today (they were big packs reduced to £1 each, smelled promising so we bought two packs and they taste delicious!). The mince made burgers for this evening which we had with the last of the oven chips - needed a pack of buns bought but the rest of those are now back in the freezer so will do for another time. The freezer is now looking a LOT emptier which is rather a novelty, although will also mean a fair bit of restocking is needed next month.The fridge is also under control - I used one of the remaining beetroot and a chunk of cabbage alongside 2/3rds of a red onion and a carrot earlier on to make a big tub of coleslaw veg which will do us for various things over the weekend. The rest of the cabbage will go with lunch tomorrow, and I’ll probably cube and roast the beetroot while the lamb is in the oven. Tea tomorrow night is likely to be cheese and crackers, and lunch on Monday will be jacket tatties with beans, cheese and some more of the coleslaw.One thing I do ideally want to do before we head off to the Hebrides is get a big batch of pesto made using our pot of home grown basil - it’s smelling superb! I’ll do the same as before I think and make it a cheapskate version with sunflower seeds and padano cheese - not exactly authentic but it tasted superb! That’ll get frozen in blobs ready for pasta salads and similar when we get back.🎉 MORTGAGE FREE (First time!) 30/09/2016 🎉 And now we go again…New mortgage taken 01/09/23 🏡

I have roasted a chicken overnight in a slow cooker and will blast some veg later when DS comes over (he is going to eat with us) and we can chat through his recent holiday and his gaming team's place in a world-wide competition raid (I don't want this to sound like I understand it but I want to know a bit as he has been doing this for more than half his like now).
I have some blackberries, apple, raspberries and strawberries I shall gently cook and maybe top with crumble.Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)
