    Fridge looking rather empty at the moment, just a few bits of veg which will go into tonight's meal. Looked outside and saw dark clouds, thought it may be a little cooler so out of the freezer came 2 portions of pheasant and apple casserole and a portion of mixed fruit crumble. Comment from DH 'That would be nice on Boxing day' we're still going to have to eat it as it's defrosted.

    Used half a bag of quorn mince to make veggie lasagne for me - half left for tomorrow - and a home canned jar of bolognaise for meat lasagne for OH.  Lunch was salad with salmon from the freezer (not quite making it vegan at the moment!)

    After using up everything except spuds we then hit jackpot with olio so still haven’t been shopping! Numbers below are packets of! 

    Lamb cutlets x 3 
    lamb neck fillet 
    lamb mince 
    smoked haddock x 2 
    Cod loins x 6 
    chicken thighs 
    plums x 2
    lemons x 2 
    limes x 2
    bananas 
    pomegranate 

    There was also a few bits of veg, 3 packets of egg custards 😏 and some take away style stuff

    Needless to say, except the absolute basics we don’t need much else as our freezer is now stocked. 

    There is celery, potatoes, courgettes from the garden and 2 huge marrows I’ve been gifted in the fridge, a cauliflower YS last week all to be used up.

    I could absolutely make fish pie to use up the potatoes and utilise the fish, I may have some prawns left too. The oven will be on so maybe cauliflower cheese and possible stuff the smaller marrow with the lamb mince for dinner whilst the oven is on. Think I’ll do this tomorrow.

    Wow that's a big haul @MissRikkiC, might have to download Olio again now 😏

    Mushroom risotto for dinner tonight which will use up the parmesan in the fridge.

    The lamb cutlets were delicious but at almost £7 I’d likely not buy them. We had them cooked on the bbq with a rice and lentil salad, bbqd aubergine and pomegranate 👅

    Great Olio haul there MissRikkiC!

    Dinner was LO veggie lasagne for me,  YS roast beef slices from the freezer for OH with new potatoes from the garden and a rather old pack of sugar snap peas.  Not much veg in, am doing a meal plan so working out what I need.

    Tomorrow's dinner for me will be coconut spinach with mixed beans (open tin in the fridge), lunch will include broad beans from the freezer.

    Seeing my folks this weekend so will be bringing home lots of allotment veg - I'm taking plums from our tree and eggs from our hens so it's a fair swap!

    Was going to make a veg chilli for dinner tonight but haven't got enough veg so going to make a meat one using some beef mince from the freezer.  Will add a bit of veg like courgettes and carrots to use those up.  Will grate them so they disappear and can use a bit less mince!  Will have with some plain boiled rice.

    Salad here as well. I put all sorts of odd things on the plate, some vegetables like carrots and  sugar snap peas, any spare fruit, peanuts or other nuts, dried fruit, crisps. We're into melon big time at the moment.
    Chicken thighs and salad for tea. followed by fruit salad made from odds and ends in the fruit bowl, no sugar as I use elderflower cordial for the liquid. I'll have a taste and maybe, or maybe not, add a spot of rum or brandy to perk it up.

    It,s surprising the large number of fresh & dried fruits and vegs you can mix together in salads. They all blend well together.  I make mine up in Individual bowls, add a fragment of chopped cheese or ham sometimes and it,s a meal in itself.  Also good competition for kids to count and identify  all the individual ingredients.  And ingredients like shredded red or white cabbage & carrots  are filling too and contain liquid so good hydrating foods  in this hot weather.    Perhaps add some tinned mixed beans of various types and there,s no need to put your cooker on to boil potatoes, in this hot weather which also  saves a little fuel.
