Yes you can freeze the roast beetroot. Perhaps wrap individually in cling film first. They,ll probably be fine when thawed for eating as part of a salad.
ihat was a good bargain bag! I suspect many of us will be eating some rather weird food combinations to avoid waste by the time this current economic criss is over.!1 -
Haven't posted on this thread for ages! Freezer door got left ajar yesterday and a few bits defrosted including two wedges of brie so I'm making brie and cauliflower soup for lunch with half a head of cauli from the fridge and made up with frozen florets for the rest. Will make some rolls with bread flour mix to have with them - must go and put them on now!
Dinner will be leftover cauliflower daal for me, not sure for OH. Trying to get back to my (mostly) vegan eating plan which does require organising but I feel so much better when I follow it and its really good for weight loss. Lots of veggies, small amount of complex carbs and proteins like tofu, beans, lentils. It's just not always easy when OH is such a confirmed meat eater but we will work out a way.
ETA - we have a glut of eggs at the moment from our chickens and I'm not really feeling the love for them but have ordered some cottage cheese to make pastryless quiche for lunch over a couple of days. OH will have carbonara which will use some up as well.2 -
Went to the freezer to get the meat out to last until the weekend. Looking at the amount of meat I realised we have cut our consumption by about half because neither Dh or myself are very hungry at the moment.
The coffee and wine consumption has gone down in preference to water.
Salads are up especially those with fruit, particularly melon.
Now on a 'Could do better' or 'How could I be so stupid' rant.
I've neglected the veg plot again this year, how stupid of me considering rising prices of fruit and veg. On a good note the wild blackberries look like a good crop so I hope to make the most of them. I've cropped the blackcurrants a couple of weeks ago but the raspberries are buried amongst nettles so that may be a challenge too far.
If I could live this year again, I would do it so differently.

Last night:- LO chicken from the previous day made into a sort of green Thai curry, Shared the remainder of the peas with Gertie Goose, she had the pods we had the peas.
Froze and labelled the remainder of the carcass to make stock at some later date.1 -
@MissRikkiC I dice cooked beetroot and then freeze. You can't really tell it has been frozen once defrosted, and can just use it in salads or whatever.

I add a chopped up small green chilli minus seeds to pickled onions and beetroot. I don't bother with the salt or heating the vinegar, just decant it. I reuse savoury jars like B-pickle or mayonnaise and discard them after one home-pickle or the lids can rust. They keep for the winter quite happily. Maybe @joedenise yours are kept longer?
You can also freeze, roasted. And you can chop up roasted and use it in cakes, even though most recipes suggest grated raw. Or you could blitz it in a processor/liquidiser and make Borscht.
We are working our way through cold roast chicken (salad and new potatoes). Seems to be working. 4.2lbs so far for me since Monday. One more double portion to go. I also have 2 huge chicken thighs defrosted and a portion of mince, so we will have a veg-heavy pasta light pasticcio over the weekend. I collected a TGTG bag from Morries which has 3 nets of oranges and two of lemons. More cakes then! Also some cut Basil leaves and a poorly pot of mint. @Suffolk_lass - to be honest I've only made pickled beetroot once as we grew it that year and had so much and neither of us particularly like roasted beetroot as a veg so decided to roast and then pickle. It did keep for a long time as we don't use much of it. So now I just buy it ready pickled but probably only buy one large jar a year.
I don't think it would be cost effective if I were to buy the beetroot even when it's on offer in Ald* or Lid*!

It’s freezer curry’s tonight, literally whatever I’ve been able to find that looks remotely like Indian food 🤣

Used a load of veg and a home canned jar of kidney beans to make a curry. Also made pasta with the last of a pack of fake bacon with the last of a jar of roasted pepper pesto.
Getting back to meal planning / using up ingredient ways. Upright freezer needs defrosting so need to consolidate three freezers down to one - freezer surprise is sure to feature.1 -
We're in full on reverse planning mode before we go away in a few weeks. Loads of cauliflower left from yesterday so that will be reheated, covered in cheese sauce and then grilled until browned. Will air fry from chips to go with it. Plenty of salad in the fridge to have as well.
