You see what you have done @EssexHebridean - now we are having jacket potatoes for supper. We had courgette soup for lunch so already had lots of veg. I may have been a tad heavy handed on the lazy chilli in the soup :#>:) . My word the cream swirl was welcome! JPs with grated cheese, baked bean, butter and the rest of the HM coleslaw. That reminds me. Lemons and Mayo for the order I will be click and collecting on Thursday

Feta cheese is a nice item to have in your fridge.  Just a few small pieces of it can really dress up all kinds of mixed vegetable salads, (hot or cold), and with the addition of a dressing and a few herbs can turn it into a very tasty meal

Ended up having some broccoli with the pasta last night which was just what it needed to offset the saltiness of the feta 👍

Dinner tonight is lentil curry (we already had everything in) and our version of Dishoom's gunpowder potatoes using our new potatoes that DH grew with his own fair hands this year.  Love a meal that you can plan and know you have everything in already.

I love feta but MrEH isn't such a fan - like many things though I've discovered that I can sneak it in occasionally and he doesn't whimper too much. (See also brown rice under this heading!)

Last night's tea was delicious! I picked all the tallest growth and biggest leaves off the basil plant in the kitchen and stuffed into the mini-processor with some padano, a good glug of rapeseed oil, pinch of salt and few grinds of black peppers, added a handful of sunflower seeds and whizzed it up well. Gave it a splash of lemon juice at the end to bring out the flavour and help keep the bright green colour too. Made enough for three "dollops" two of which have been frozen, and threw the other in with the roasted tomato and pepper. Added a dollop of soft cheese and heated the lot up before throwing in sliced cooked sausages (lamb, rosemary and garlic ones) then spooned the sauce over the pasta - really tasty and I'll certainly be looking to make some more of that pesto at some stage.

The rest of the sausages will get re-heated tonight to have with mash and whatever form of veg offers itself up. Not really a "summer" meal as such but it's ok because it's not really "summer" weather as such here today either!

I'm trying to second guess what replacements we'll get in the veg box this week to cover our opt-outs - possibly just get extras of something else in the box which will be fine as long as it's not onions, but we could equally end up with either salad leaves or beetroot, possibly broccoli but I've got that as an add on so I'll be a bit miffed if they give us extra as a replacement too!

Reckon I'll plan a curry night for Friday as I have some tubs of the curry I made the other week in the freezer still. I might finally get round to making that dhal as well - although it will be butternut squash rather than sweet potato! Maybe Bombay potatoes as well?

LO pork for DH with mini roasts.
Went shopping today mainly for fruit and veg so it's a stir fry for me with some goats cheese that friends brought back from France.
Pudding - not sure, thinking of something with chocolate, if I've time.

Used up the LO couscous from the other day for stuffing some pointy peppers which came in our TGTG bags on Sunday.  Gradually using up all the fruit and veg we got.  All the bakery goods went into the freezer and DH is enjoying the hot cross buns, crumpets etc!  Enough there for at least the week and probably a bit longer than that!  I don't eat any of these.

Using up the last of the TGTG mushrooms tonight with a mushroom stroganoff.  Haven't got any creme fraische so will use a tube of Primula for the sauce - I think cream cheese works really well in stroganoff  - beef as well as mushroom!

After being ill, I am totally overwhelmed with food in freezers, cupboards, fridge… I am going to try to use everything up and just start again I think!

Lots of things trying to be used up today. Made a salad for lunch to use up things lurking in the fridge and the tin drawer (boiled egg, spinach/salad leaves, radishes, tinned mackerel, sun dried tomatoes, chives from the garden). Pudding was yogurt and valiantly trying to use up some of the frozen fruit from the freezer.

I also found an old bag of self raising flour (best before May 2022) and turned it into an orange and apricot cake since I have too many oranges in the fruit bowl.

There is mountains more to use up…. Watch this space as it might take me a long time!

DH was "gifted" some huge baking potatoes yesterday from someone at work (I didn't ask why...) so that's dinner for tonight rather than the ready made leftovers I'd planned from the freezer.  Having the leftover half tin of beans on mine that's been sitting in the fridge for a few days with some cheese on top.  Think he's having tuna on his.  Fridge is looking almost empty so need to focus on the cupboards and freezer next week and see what I can use up there.

I cooked the community lunch yesterday so no proper meal for supper last night. I have ended up with 3 chicken thighs left as three people were no shows at the last minute. DH snacked one last night and the other two will be left for DS who is puppy sitting tonight. I have half a tin of baked beans and will leave him a note suggesting Jacket potato with beans and cheese for supper, and the chicken when he gets here, hopefully mid afternoon (as he is puppy sitting while we are at a party  with an overnight stay).

@QueenJess, I look forward to hearing about your stock use ups (I find I keep buying more...)
