I've pressure cooked a chicken with some puy lentils and a veg stock jelly in water and portioned the lentils into three generous takeaway box packs for the freezer, with the bit of stock that wasn't completely absorbed. The chicken might go in a tray bake or a pie, or a curry, or some soup. It's in the fridge at the moment. We are having pork chops that DH fancied defrosting with speared new potatoes tonight ie the tine of the fork went into or through them when we harvested them! Got quite excited when you said speared potatoes as thought it was a new way to try potatoes! Glad you explained! We used to have those when we grew potatoes but not grown any for several years now as the bit of garden I used to grow them in was alongside next doors house and actually belonged to them but they let us use it and then a few years back they decided to get it concreted and covered in gravel! It looks awful but also means I've lost a good bit of growing space and also my rhubarb plants which also use to grow in there.
We've got some of the fish pasta bake left from last night so will be having that for lunch today instead of the planned toasted cheese sandwich. I'm sure it will be much more filling too.
Trouble is it means we'll be having pasta 3 days running as have planned pasta and veg from the freezer for tomorrow which is already in the fridge defrosting! Never mind, I'm sure we'll survive!2 -
I've only just come in so while tea is cooking I thought I'd sit down for a few mins catch up.
I had some puff pastry in the fridge that needed using up so tea tonight is large vol-au-vent with a selection of veg from the fridge a bit of LO chicken and a sauce. ice-cream to follow.

Got a couple of TGTG bags from Morries this afternoon so plenty of reverse meal planning going on this week - meal plan completely changed!
LO beef from today will be turned into a stir fry instead of just having it sliced with chips and beans which will use up some of the peppers, mushrooms & fresh noodles (other pack of noodles frozen for later in the week)
We'll be having stuffed mushrooms a couple of times as got 2 packs of 4 flat mushrooms. The closed cap mushrooms will get turned into a stroganoff one night this week.
Got some broccoli for 10p in A*da on the way back so we're having that with dinner tonight. Also got some salad stuff at 10p so plenty of salads this week.

We went to my cousins for a carb rich afternoon tea yesterday and didn't want anything when we got home, so the chicken I pressure cooked in with the puy lentils remains in the fridge but will be used for something tonight. It needs to be something with colour as the flesh has adopted the colour of the lentils a bit. I have frozen 3 takeaway boxes of lentils but one might be liberated for a lentil bolognese this week.
DH observed he has lost over half a stone and is the lightest he has been since about ten years ago. Our light style of eating is helping him (mine however, is a much slower reduction, with about 3-4 pounds since April).
The speared (why does Spearchucker Jones come into my head when I type that?) potatoes were crushed (not Mash'd 🙄 [sorry about the pun]🤣🤣) with a bit of butter, a dash of cream and some chopped up parsley and consumed with a pack of broccoli and cauliflower and some grilled pork loin chopsSave £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Just about to chuck the other half of my pork joint in the slow cooker for pulled pork this evening: the other half of the pork was already used for sweet and sour last week. Will probably end up with leftovers so will be something to add into the freezer. Going to make up some mac and cheese to use the last of the cheese block from last week and will also have the last of the coleslaw from last week too.

Morning all - nope, actually afternoon I've spotted, doesn't time just fly?!
We brought 6 eggs back from camping over the weekend - 4 left from what we'd bought for breakfasts and 2 from friends who didn't want to take them home - so I have asked MrEH if he can find a few minutes to hard boil half a dozen from the box that was already in the larder today. Some will get used for salad tonight - probably alongside a tin of tuna shared between us - and the other two will make lunches for us both later in the week.
I've also pre-prepared the ground for tea tomorrow night too - a pack of lamb, garlic & rosemary sausages from the freezer and also one tub of the tomato and pepper chunks I roasted last weekend - and again that will be a roll-over tea as two of the sausages will go with the tom/peppers for a pasta dish tomorrow, the other 4 will go alongside mash & veg for wednesday night. Happy with that as it's three nice straightforward meals already planned out.
I've reviewed whether we want the next veg box now I can see contents - decided that yes, we do, but I've added potatoes to my opt-outs for this one as we have lots, and have also ordered some tenderstem broccoli as an add on as the last lot of that was lovely.🎉 MORTGAGE FREE (First time!) 30/09/2016 🎉 And now we go again…New mortgage taken 01/09/23 🏡

I picked some lettuce from the self-seeded cos lettuce in the courgette patch and covered it with homemade coleslaw (carrot, onion, cabbage, green chilli in mayonnaise, lemon juice and black pepper dressing) and used up half a slightly wrinkly pepper, a beetroot and some cold chicken. That all sounds very tasty SL!
There was slightly less lettuce left in the bag than I thought, so last night's salad had jacket potatoes added. I didn't bother adding the tuna as a result - we just went with the hard boiled eggs and it was very filling and delicious.
Still more of the mini peppers to use - I also left a single decent sized mini cucumber as that will then work to be sliced and added to sandwiches for lunches this week - although MrEH did tuna ones for today and I see no sign of it...!
Tonight is going to be sausage pasta - I'll cook all the sausages at once as usual and then reheat the ones to be eaten tomorrow. Planning to use an absolute mas of the leaves from our basil plant too - in fact I may even make a quick cheaty pesto in the mini-processor - I've got italian cheese and could sub sunflower seeds for the pine nuts, perhaps?🎉 MORTGAGE FREE (First time!) 30/09/2016 🎉 And now we go again…New mortgage taken 01/09/23 🏡

Bought feta cheese last week to also go with my greek salads but didn't end up using it.
