Sounds lovely Suffolk. Don't think you can ever have an overload of asparagus. Thought about getting some today when I went shopping but they looked a bit ropey especially at £2 for a small bundle!

Interesting. I've just been reading a few of the posts on this thread. I'll go back through thoroughly later for any veggie/vegetable ideas for DD.
I currently have veggie kebabs cooking, just chopped bits off red and yellow peppers, red and white onion, mushrooms and cherry tomatoes.
Later I am making a HM coleslaw and my MIL's version of 'German Potato salad' from the days when she was an Army wife stationed in Germany.
Cook New potatoes. (New is better, can be done with old if that's all you have). Whilst they are cooking in a pyrex or similar bowl chop onion and gherkin into it. When potatoes are cooked, drain water and put the hot potatoes into the bowl on top of the onons and gherkins. The heat doesn't exactly cook the onion/gherkin mix but does take the edege of rawnes off. Leave to cool. Then mix mayo.
We will be having the coleslaw, potato salad and a mixed salad with burgers, meat for me and DH, veggie ones for DD.
Edit - Just to add that I HATE gherkins in any shape or form, I won't even order burgers if they come with them because I can taste them even after removed and THIS is the only recipe I've found that I enjoy them in.10 -
@Pyxis - I restrained myself to one bunch of green and one of purple - but as this is my first supermarket shop in 2 months I went overboard on a lot of things! THe fridge is full of veg and my box arrives on Thursday! So there may be more soup in my future too... I also need to remember that the treats need to last me a couple of months, not just this week... They're supposed to make sure that another couple of months working through the rest of the freezer contents and the veg boxes doesn't get too boring. I don't plan another delivery anytime soon.
Lunch today has been watercress & clementine salad, radishes, cherry toms, celery and roasted beetroot with feta.
Tonight is going to be some variety of mince from the freezer, with defrosted red cabbage and lots of green veg from the vast selection that arrived yesterday! Steamed PSB, courgettes fried in garlic, and maybe some spinach and cabbage. I hope the weather warms up soon as I ordered lots of salad and it all arrived!10 -
Well, @greenbee, my asparagus gluttony doesn’t stop there, because as well as my veg/fruit box, I’ve ordered a cook’s ingredients box as well, as I found it has things I really want, like fresh ginger root and joy of joys! sea purslane which I’ve not had for a year! However, the box also contains..........yes, asparagus! 😂😂😂😂😂😂😂😂
Still, the box has other lush goodies like blueberries, avocado and stuff, so it will all be put to good use assuming it all comes! Fingers crossed the purslane comes! It’s a very useful vegetable as it contains as much omega 3 as some fish, so for a veggie, that’s good! It’s very seasonal, though.
Mind you, all this asparagus will make going to the loo very interesting! 😁😁😁(I just lurve spiders!)

Ive never ordered a veg box, I don't actually like veg, eat it because I have to only lol
Plus I work in veg production which means I get as much veg as I want. Unfortunately this being NI, we don't have much choice lol
More good news on the food front, a local fishing crew which usually only goes shell fishing does get small amounts of cod, haddock, plaice, bream etc. Because it is just small amounts they only sold to local restaurants ( the shell fish go for processing ) so they are now selling to the public, doorstep deliveries. Ive been lucky to nab some haddock this week being delivered Friday. I love haddock, its hard to find here so Im looking forward to a lovely treat of fish and chips on Friday - even if I do have to cook it myself lol
Sausage and mash was last night. Tonight its going to be some thighs and drumsticks that have been in the freezer for forever, with salad and new potatoes to finish up all the salad Ive still got in the fridge10 -
@Pyxis - I've skipped my veg box for this week, but have a cooks box, bacon and creme fraiche arriving on Thursday. I'm betting I get salad (of which I have lots!), jersey royals (love them, but don't eat many potatoes), asapagus (because I have lots) and rhubarb (because I've just carefully frozen the last lot!). I had fresh ginger last time, I'm hoping for turmeric this time. And the sea purslane and blueberries.

And snap! I also decided to skip my mixed box! I suddenly realised that I had too full a fridge to accommodate any more veg, especially as I would be getting pots or carrots again, and I had enough fruit. I will be very happy just with the cook’s box!

Not sure what we will eat tonight but I have a cauliflower and cabbage and cauliflower cheese sounds good. Husband managed to get courgettes this week so off to make soup now.
