Reverse Meal Planning

We are off in our van for a day or three today - I need to dig out some meat for the BBQ for at least one night (we might eat out for the others) - last night we met up with friends at a pub near the local town where they were staying - that was good. I had sea bass and DH had haddock - we try to eat fish when we go out (our home is too small to smell of fried fish!)Save £12k in 2025 #2 I am at £10,020.92 out of £6000 after September

I also eat a lot of fish if we go out for food as DH isn't the biggest fan so rarely have it at home @Suffolk_lass. Hope you enjoy your trip!
Today I'm using up the last of the tomatoes for lunch (roasted on toast with some cream cheese) and dinner tonight is going to be carbonara for me to use up the last of the eggs, parmesan and mushrooms in the fridge, plus some pasta from the cupboard. We have a glut of potatoes to use up that I'd forgotten about so will need to work those into the meal plan somehow over the next week or so.Emergency Fund - £8572.39 / £10,000 :: Mortgage OP 2025 - £LISA 24/25 - £3200 / £4000 :: NSD 2025 - 2 / 150 :: Books Read: 1 / 52 :: Decluttering - 4 / 1000Engaged 9th December 2010 :: Married 29th October 2015 :: Bought a House 13th January 20173 -
Today using up more fresh climbing beans & tomatoes with feta cheese in a salad. We,ve been eating them so often recently but a shame not to use fresh produce from the garden while it,s available. will miss their flavours when winter comes. Nothing quite like the flavour of a sun ripened tomato just picked from a plant!3

You're all very inspiring today and have got my tastebuds going! We're having a frittata for lunch with salad which will use up the leftover potatoes, a glut of eggs and some of the salad still growing in the garden. Weather is gorgeous here today so trying to make the most of it while it lasts. Off to pin out another load of washing!2

Checking back in after a few weeks of being very disorganised and eating a lot of rubbish!
Breakfast was smoothie with strawberries from the freezer - still got loads to use up. Dinner tonight will be stuffed courgettes using up a huge courgette gifted from a neighbour (as ours have barely produced anything this year). Still in need of doing a cupboard and freezer inventory!2 -
Last night's dinner was green bean & pork mince stir-fry with jasmine rice. OH did an amazing job with the new to us recipe & we both agreed it is a keeper. Another item from the freezer eaten!4 YEARS 10 MONTHS DEBT FREE!!! (24 OCT 2016)(With heartfelt thanks to those who have gone before us & their indubitable generosity.)...and now I have a mortgage! Going to use up some chicken thighs from the freezer to make a sweet and sour chicken. Will also use up some bits from the fridge and cupboards.
We had jacket potatoes for lunch with just butter & cheese and some salad. Going to have to buy lettuce soon as down to the last bit. @ruby_eskimo if you have some big potatoes could you just bake them and then freeze them? Only need a few minutes in the microwave to reheat and can always crisp up a bit in the oven. It's what I usually do if I've got some big potatoes which need using up.

Joedenise, if I ever get space in my freezer I'm going to freeze jacket potatoes!2

Oh that's a good shout @joedenise they're actually not that big so I'll probably boil them up and freeze them for later use. Always forget that I can freeze potatoes!
The planned dinner didn't happen last night so that's gone back on the plan for tomorrow (DH doesn't eat mushrooms so I save those for my Tuesday and Thursday dinners when we sort our own things out). Tonight it's swedish meatballs with mash potato and broccoli as per DH's request, even if the weather isn't right for it 😆Emergency Fund - £8572.39 / £10,000 :: Mortgage OP 2025 - £LISA 24/25 - £3200 / £4000 :: NSD 2025 - 2 / 150 :: Books Read: 1 / 52 :: Decluttering - 4 / 1000Engaged 9th December 2010 :: Married 29th October 2015 :: Bought a House 13th January 20172 -
Hi all, been busy using bits from the freezer for meals. Have added more to it from y/s bargains and the community grocery and I'm expecting a MR T delivery tomorrow so that should fill it up. I've also got some fridge contents that will be made into meals and frozen, planning sweet potato & feta tortilla, cauliflower cheese and butternut squash and chickpea curry.Grocery Challenge 2024
