Afternoon all, found out my collection slot for 0lio has been claimed by a charity so that will mean slightly higher food bills but a good opportunity to run down the freezer and defrost it. I need to replace 2 drawers as the fronts are cracked so still debating whether I just buy a new frost free chest freezer instead.Grocery Challenge 2024

I'm not sure I am going to have the time to make my fish pie now so will need to freeze it for a later date and I don't have anything else out so it looks like tonight's dinner is going to be simple beans on toast.

Lunch used up 2 of last week's eggs with lots of salad. Tonight is chicken stock from the fridge with sweetcorn and the end of a chilli from the freezer and a bit of cabbage for greenery. I'll follow it with a smoothie to use up some of the melon/kiwi/strawberry taking up space.4

We had pulled pork for dinner tonight, made with a YS joint from sometime in Dec. Huge joint, so enough for another round of pulled pork baps and probably some left after that for dirty burgers some time. Served tonight in really fluffy, huge hm floury baps - fish out of the oven, so still warm

I roasted some butternut squash, a couple of carrots, a chunk of sweet potato, onions and a leek then combined with some red and white cabbage I had steamed for 3 minutes, covered with cheese sauce and back in the oven for 20 minutes - it looked black in places with both the onions and leeks having caramelised but it tasted great!Save £12k in 2025 #2 I am at £10,020.92 out of £6000 after September

Using up the last of the roast chicken plus 1/2 a can of cannellini beans which I'd previously frozen to make a sort of casserole using up a couple of carrots, a couple of sticks of celery and half a celeriac from the fridge. Will clear quite a bit of space in the fridge!
Will serve with some mash and the cabbage which is languishing in the bottom of the fridge. This will clear most of the non salad veg ready for the next shop early next week.

All meals today from freezer and cupboards!
Breakfast was kedgeree made using home smoked haddock which was absolutely delicious, much nicer than anything I've ever bought; onions, rice, spices from cupboard.
Lunch will be home smoked salmon and prawns from freezer plus some salad for the fridge.
Dinner tonight will be home made KFC and corn on the cob from freezer, HM oven baked chips using potatoes from the sack we bought recently plus beans from the cupboard6
